Metabolic Balance USA All-Natural Weight Management & Personalized Nutrition Dr. Funfack committed his whole life to the notion of how to stay in good health.

In the early 1980s, when Dr. Wolf Funfack was writing his doctoral dissertation at the Free University of Berlin, the medical world was in transition. Dr. Christiaan Barnard had just become internationally recognized for performing the world’s first heart transplant. At the time, although slightly less fashionable, Dr. Funfack was working on a more-down-to-earth and practical dissertation topic: “Obesity in Infancy and Early Childhood.” Instead of posing the question, How can I treat disease or replace diseased organs? After spending 10 years in the cardiology unit at Moabit hospital in Berlin, he took his family to Isen, in the foothills of the Alps. There he established his own medical practice. Dr. Funfack began noticing that a number of his patients were gaining weight. At the same time, he noticed a worsening of patients’ blood values, a deterioration in patients’ quality of life, and increases in disease. He treated all of his patients with the most advanced treatment methods available worldwide in nutritional medicine. But those methods seemed to work only for the short term. He also began noticing that he, too, was gaining weight and that his blood values were worsening. At that time, his wife, Birgit Funfack, was training to become a naturopath. She brought Dr. Funfack new insights, such as the theory that all physical processes should be seen as individual processes that are influenced by a multitude of factors. The two began exchanging information and experimenting to see whether small changes in their own habits would have an impact on their health and well-being. In developing their new theories, they brought in another expert: Birgit's sister, Silvia Bürkle. As a food technologist, Silvia viewed foods and their effects from a different perspective, which immensely enhanced the discussions between the three. Those events marked the beginning of Metabolic Balance®. Silvia Bürkle classified all foods by their individual components. The three founders discussed and revised their evaluations and finally checked the accuracy of their methods by testing their nutritional plans on themselves. Their success was nothing short of impressive, and word got around. Soon, everyone wanted to take part in this successful nutrition program, and Metabolic Balance® became well-known in and around Isen. Within a short time, the workload become so much to handle that the founders developed a program that would enable them to create the individual nutrition plans on a larger scale. Dr. Wolf and Birgit befriended physicians and naturopaths to help them supervise their growing list of clients. With that, Metabolic Balance® was born. The Metabolic Balance® software program is based on the German national food database. Centered on the findings of numerous medical research studies, personal research, and experience, the principles of Metabolic Balance® were developed. This complex program gets continually refined and adjusted to reflect current research. Today Metabolic Balance® is widespread. It is well-known throughout Germany and has already gained worldwide interest. The basic concept of individuality has not changed since its original creation. That individuality covers the nutrition plans, the personal supervision, and the joy the participants experience when the success of Metabolic Balance® begins to work on them.

Fat is functional - it's a critical nutrient for our health! Our bodies need certain fats, which we can't make on our own, to: provide energy, support cell function, help produce key hormones, and absorb certain vitamins. However not all fats are created equal and is important to know which fats to eat and which ones to avoid. There are 3 main fat types: unsaturated fats, saturated fats, and trans fats. Unsaturated fats are the most beneficial, and are good for our bodies in moderation. They are considered heart-healthy, great for brain health, and can help lower 'bad' cholesterol. Some saturated fats can also be beneficial (again, in moderation), while trans fats are considered a harmful type of fat. Leafy Salad with Walnuts

Even though it’s cold outside, we don’t always have to have a warm meal – today we have a recipe for a delicious winter salad packed with vitamins.

Ingredients:
1 1/2 cups (35 g) lamb's lettuce or leafy green of choice
25 g chopped walnuts
1 shallot
2 tsp. apple cider vinegar
1 Tbsp. oil
1 serving of protein (whatever is on your plan)
Salt and pepper

Preparation:
Wash and then pat dry the lamb's lettuce. Whisk the vinegar, oil, shallots, salt and pepper together for the dressing. Add the walnuts to the lamb’s lettuce, add the dressing and serve with your protein of choice!

They contain the essential fatty linolenic acid (an omega-3 fat) which is one of the two essential fatty acids that humans need to obtain from their diet. Essential fatty acids are known to offer a whole range of anti-aging and anti-inflammatory benefits. They keep the heart healthy by helping the blood vessels be flexible, prevent arteriosclerosis and have a positive influence on cholesterol levels. Butternut Squash Gratin

With fall in full swing, butternut squash are coming into season. Give this delicious recipe a try.

Ingredients:
1 serving mozzarella
1 serving vegetables (butternut squash, spring onions)
Rosemary
Fresh garlic (sliced)
Salt and pepper

Preparation:
Wash and clean the vegetables and cut them into very thin slices or fine rings. Cut mozzarella into thin slices. Put the butternut squash slices into a casserole dish and season to taste with rosemary and garlic. Bake in the oven at 400°F (200°C) for about 15 minutes. Cover with mozzarella and bake for another 5 minutes. Sprinkle with spring onions. Enjoy it!

Homemade Spice Paste

Are you looking for ways to spice up your soups and vegetables in the colder months? Well this easy to make spice paste is the perfect way to add a lot of flavor and warmth to dishes in the winter!

Ingredients:
300 g of celery
300 g of carrots
2 onions
1 fennel
1 clove of garlic
Ground cloves
5 ground fennel seeds
1 pinch of cinnamon
1 - 2 bay leaves
1 bunch of fresh basil
3 fresh sage leaves
2 stalks of fresh rosemary
10 stalks of parsley leaves
100 grams sea salt
1 teaspoon of fresh pepper

Preparation:
Add everything to a blender and then puree until smooth. Transfer the paste into a jar and store in the refrigerator. Due to the increased salt content, the paste will keep fresh in the refrigerator for a very long time. If you are allowed to use oil in your plan, then add 10 tablespoons of good olive oil. Simply add 1 teaspoon of the paste to your food and enjoy.

Comforting Parsnip Soup

One of the most comforting foods during the fall and winter months is a rich, creamy soup! Today we have a recipe perfect for this.

Ingredients:
1 serving of yogurt
1 serving of vegetables (parsnip, leek)
Fresh ginger
1 cup (300 ml) vegetable stock
Paprika powder
Oil
Salt and pepper

Preparation:
Wash and clean the vegetables, and cut them into large pieces. Cook the leeks and chopped ginger in oil and add the parsnips. Continue cooking for about 5 minutes, deglaze with broth and simmer for 10 minutes. Then season to taste and puree until smooth. Put aside approx. 2 tablespoons of yogurt and stir the rest into the soup. Finally, season to taste and, before serving, season the remaining yogurt with paprika and add it to the soup as a garnish.

Parsnips
As the days are getting shorter and colder again, delicious winter produce such as parsnips come into season. The parsnip is a common root vegetable closely related to carrots. It is a long taproot that has a soft, pale white color. Although parsnips can be used in similar ways as carrots, parsnips are sweeter in flavor when cooked and are perfect roasted, in soups or stews, or casseroles. Not only are parsnips sweeter than carrots but they also contain more potassium and vitamin C than carrots. Now as we are approaching the winter months, consider incorporating this vegetable into the weekly meal rotation.
