New recipe ✨ Creamy Lemon Ice Cream 💛 all the flavor without dairy, refined sugar and just a handful of ingredients. Churn or no churn, this “nice” cream is so delish I’ve been dreaming about it ever since it disappeared. Recipe on the blog (link in bio👆🏻).
With skyrocketing rates of type 2 diabetes and the majority of the population considered metabolically unhealthy, processed sugar has become enemy #1. Well I’ve got good news folks. Mother Nature has created delicious sweeteners...think dates, maple syrup and you’re on track. Note: glycemic loads vary so take note if your blood sugar is not stable.

For some Friday Fun...why not try these Millet Nori Rolls with Tamari-Ginger Dipping Sauce (recipe link in bio).
I always love a combo of delicious and nutritious and this one really packs it in...
🌱Millet is an ancient gluten-free whole grain considered the most easily digested of all grains/cereals. Rich in protein and fiber as well as vital micronutrients including iron, magnesium, calcium and phosphorus. It’s super versatile and can even be made into a morning porridge.
🌱Nori is the sea vegetable (or seaweed) used for sushi and contains an abundance of healthy fiber, protein and essential micronutrients, most notably iodine.
Pair these with this yummy Tamari-Ginger Dipping Sauce or simply use the standard tamari-wasabi combo. Simple and easy rolling tips included.

New recipe alert ✨ after all, shouldn’t every day be a taco day?...the perfect meal in the comfort of your hand. These Cheesy Mushroom Tacos are my latest favorite and paired with last year’s trifecta you’d have a perfect plant-based taco spread for any occasion.
Are you confused about the difference between “vegan” and “plant-based.” Not all plant-based eaters are vegan but all vegans are plant based, or at least they should be. While the shift is slowly moving away from eating animal protein, the word vegan seems to be encompassing a lot of junk food. After all, you could call a twizzler a vegan food. But is it healthy? Sorry, no. Plants? They are healthy. Plants contain the nutrients and micronutrients our bodies need to function properly.

In the meantime, enjoy one of my favorite recipes from the 3-Day Smoothie Challenge.
Minty Matcha Smoothie (1-2 servings):
1 banana (can be frozen).
Handful organic spinach or kale (can be frozen).
1 TB fresh mint leaves.
1 tsp matcha powder (culinary grade ok).
1 TB flax meal.
1/2 in k**b fresh ginger.
1 cup coconut milk.
1/2 tsp vanilla extract.
Ice if needed for texture/temp.
Blend all ingredients in a high speed blender. Enjoy! 🌱

Still playin’ with cashew cream cheese and plant based butter butter and discovered the easiest way to make a delicious dairy-free sauce!
Just mix 1 TB of your favorite Montys flavor with a little water or almond milk (the most neutral) and voila! Ideas here include:
👉🏻Sautéed Pea Shoots with scallion cream (recipe on the blog) 👉🏻 dairy free butter glazed steamed and grilled carrots on a bed of scallion cream sauce with “let’s not waste carrot top pesto” (on the blog) 👉🏻 tomato quinoa soup with everything bagel cream sauce and 👉🏻roasted and smashed potatoes with 3 cream cheese sauces (plain, everything and scallion). All 💯% YUMMY!

Toast Tuesday just hit rock star status with (aka the best dang nut cheese out there!)...I hit the jackpot and was gifted four tubs of this and I’ve been playing ever since. Clean ingredients, no fillers, preservatives or unnatural flavorings. Just whole food delish. 🥰
Can’t wait to share more recipe ideas using Montys...lmk what you’re craving....🤔
