Recipe for 4 servings
Nutritional values: 41g protein / 75g carbs / 39g fat // 838 calories
Ingredients:
• 2 tsp coconut oil
• 1 small pumpkin (800 g)
• 1 onion
• 2 cloves garlic
• 2 cm ginger
• 800 g tofu
• 6 leaves Chinese cabbage
• 250 g ramen noodles
• 300 ml vegetable broth
• 800 ml coconut milk
• 3 tsp curry paste
• 3 tsp starch
Preparation:
1. Sauté garlic, ginger, and tofu in coconut oil in a pot.
2. Add pumpkin, vegetable broth, and onions.
3. Simmer with the lid closed for 15 minutes.
4. Stir in the curry paste, coconut milk, and soy sauce.
5. Add the Chinese cabbage and noodles, then simmer for another 5 minutes while stirring.
