Recipe for 4 servings
Nutritional values: 41g protein / 75g carbs / 39g fat // 838 calories

Ingredients:
• 2 tsp coconut oil
• 1 small pumpkin (800 g)
• 1 onion
• 2 cloves garlic
• 2 cm ginger
• 800 g tofu
• 6 leaves Chinese cabbage
• 250 g ramen noodles
• 300 ml vegetable broth
• 800 ml coconut milk
• 3 tsp curry paste
• 3 tsp starch

Preparation:
1. Sauté garlic, ginger, and tofu in coconut oil in a pot.
2. Add pumpkin, vegetable broth, and onions.
3. Simmer with the lid closed for 15 minutes.
4. Stir in the curry paste, coconut milk, and soy sauce.
5. Add the Chinese cabbage and noodles, then simmer for another 5 minutes while stirring.

Pasta
250 g Broccoli
300 g Flour
2 Tsp Salt
Sauce
250 g Chickpeas
2 Garlic cloves
200 g strained tomatoes
2 Tbsp Tomato paste
Italian herbs
Salt, pepper
Toppings
Basil
Vegan parmesan
Instructions

Preparing the broccoli pasta dough
Cook the broccoli until soft.
Mash the soft broccoli and knead with flour and salt to form a firm ball of dough.
Cutting pasta with scissors
Use scissors to cut off the dough over boiling water.
Cook the pasta for 5 minutes and then drain.
Prepare the sauce
Fry the garlic in a pan.
Add the chickpeas and sauté.
Stir in the tomato purée and tomato paste until everything is well combined.
Season the sauce with Italian herbs, salt and pepper.
Fold in the pasta and serve
Divide the broccoli pasta between plates.
Garnish with fresh basil and vegan parmesan.

Treat yourself to a heavenly smoothie bursting with flavor! Blending ripe banana and juicy strawberries with a splash of water creates a refreshing base. Enhanced with a hint of vanilla extract and creamy cashews, this indulgent blend is both satisfying and delicious.

1 banana
1 cup strawberries frozen
1/2 cup water
1/4 cup cashews raw, soaked
1/4 tsp vanilla extract non-alcoholic (optional)

In a blender, add all the ingredients. Blend until smooth. Pour into a glass and enjoy promptly.
Rinse blender with water. Then add about 1-2 inches of water back into blender with very little dish soap, blend on high for easy cleaning.

Today is and I’m not celebrating like I usually would. My son was diagnosed with 2 types of ADHD (Dr. Daniel Amen) and one of the recommendations is quitting Red 40 and all refined sugar.

When I told my son, he was NOT happy!!

I offered to quit my world’s favorite food to support him, not kale, but chocolate.

Here I am today, on week 2 of my dark chocolate detox, craving it every day but feeling closer to my son ❤️
