Stuffed Bell Peppers

Recipe serves: 3
Prep time: 15 minutes
Cooking time: 30 minutes

Ingredients:

3 Bell Peppers, topped and de-seeded
Spray oil
1 lb. 93% lean ground beef
Red onion, diced
3 Garlic cloves, diced
Morton’s reduced sodium salt
Pepper
Lemon pepper seasoning
1/4 C 2% milk shredded cheese
3/4 C White rice, steamed

Directions:

1. Pre-heat your oven to 500 degrees Fahrenheit.
2. Rinse, top, and de-seed your bell peppers
3. Place aluminum foil on the bottom of a cookie sheet.
4. Lay your bell pepper (open side up) on your lined cookie sheet with top next to them.
5. Place in oven , uncovered, for 25 minutes.
6. Spray a pan with oil and place over medium heat.
7. Add your onion and garlic mix; stirring often for about 2 minutes.
8. Add your ground beef; stirring until 95% browned.
9. Add seasoning to your ground mixture.
10. Cheese next.
11. Now rice; stirring until blended.
12. Pull your bell peppers from the oven.
13. Drop oven temperature to 350 degrees Fahrenheit.
14. Stuff each bell pepper with your ground mixture.
15. Place back in to the oven, uncovered, for 5 minutes before serving.

Nutritional information: Protein-24g, carbohydrates- 20g, fat- 10g, sodium- 375mg
