Community Cancer Services

Community Cancer Services CCS is a non-profit, Community-funded cancer resource center, offering financial, emotional, and physical support to our community.

We provide emotional and financial support during the journey that begins with a cancer diagnosis. Community Cancer Services opened in October 2003. Formed in response to a need for local support and information, the services provided by CCS continue to evolve as we learn more about the needs of local cancer patients and their families. Since CCS began providing services, we have discovered a great need among cancer patients for financial assistance. Because cancer can strike anyone at anytime, CCS does not require a client to meet a certain income level before qualifying for our services. CCS provides you with a resource advisor to help connect you with local resources. We work with other various available agencies in the community to help fill your needs.

August 16th was a night to remember, and it wouldn’t have been possible without the amazing people and organizations who made it all happen.

🐟 Baked Cod with Lentils & Salsa Verde

Lentils Base:

- ¾ cup green lentils
- 1 tbsp olive oil
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- ½ tsp salt
- 1 cup grape tomatoes, quartered

Salsa Verde:

- ¼ cup parsley, chopped
- 8 basil leaves, chopped
- 1 tbsp capers, chopped
- ½ tsp Dijon mustard
- 1 tbsp white wine vinegar
- ⅛ tsp black pepper

Protein:

- 4 cod fillets (4 oz each)

Benefits:
Cod is easy to digest and high in lean protein to support tissue repair. Lentils offer slow-digesting fiber and energy. Herbs in the salsa provide anti-inflammatory phytonutrients.

At Community Cancer Services, we’ve seen firsthand how even the smallest acts of kindness can make the greatest impact.

🍲 Lentil Artichoke Stew 🍲

Ingredients:

- ¼ cup vegetable broth
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 cup dry red lentils
- 1 bay leaf
- 2 cups water
- Juice of 1 lemon
- 2 cans (12 oz each) chopped tomatoes
- 1½ cups artichoke hearts, quartered
- ¼ tsp crushed red pepper (optional)
- Salt and pepper to taste

Benefits:
Lentils provide plant-based protein and fiber that promote gut health and fight fatigue. Artichokes are rich in antioxidants that support liver function—a vital organ for those undergoing chemo or radiation.

The artichokes in this stew add dietary fiber, vitamin C, and folate. This aromatic and tasty Middle Eastern dish is great served alone or over brown rice or pasta. Using fire-roasted tomatoes is not essential, but they will give the stew a delicious smoky flavor.
