If you are struggling with meal prep, use my KISS method: keep it simple stupid.

This is a dinner that I šŸ’Æ improvised. When I was doing meal planning and grocery shopping on Monday I was super rushed, didn’t have much money for food, and knew I would have barely any time to cook this week. I have some major issues with the business that need my immediate intervention and have sent my stress levels through the roof. On Monday I made a simple veggie dip and cut up several veggies we can eat with it. Tonight I got home from work late, mentally spent, and physically exhausted. I didn’t really have a plan for dinner. I wandered around my kitchen and pantry and looked for things I could use. I had ground beef, macaroni, and salsa I had made on Monday. I proceeded to throw things in the pan, and in 10 minutes ended up with a taco mac and cheese that was divine. We had the veggies with it and everyone was happy. Having a simple meal that was delicious and I had invented on the fly was so satisfying. It doesn’t solve all my major problems at work, but it did remind me why I love food. All the things fell apart this week, but family dinner brought it back together. Remember that meals don’t have to be complicated, just balanced. Have you ever made a decision like this? šŸ˜‚

There is actually a reason we can tend to ā€œself-sabotage.ā€ Something I often hear from my clients is ā€œI know I should have made a better food choice in XYZ situation, but I didn’t, and then I felt guilty about it the rest of the night and my body didn’t feel good.ā€

Here’s the scoop: Humans act in predictably irrational ways. We will do what we want not necessarily what is logical, unless there is a severe immediate consequence for that choice. The difficult thing with food is that there is rarely a severe immediate consequence for what we eat, so our conscious brain doesn’t over-ride the system and help us make the logical decision. That mechanism is referred to as ā€œstimulus control.ā€ So, sometimes we can alter our environment to improve that stimulus control. This is also why developing mindful eating skills matters so much. If you want more help with this, we got you!

This is why I love farmer’s market season SO much! If you think healthy food tastes terrible you are doing it wrong. High quality food makes a difference. I have a homemade flatbread from I got from the Murray farmers market, with organic eggs, organic baby spinach, cheese, and a balsamic reduction from I got at another farmer’s market in Idaho (they ship to Utah, yay!!). Paired with organic strawberries. It only took 5 minutes to make it this morning, and wow! So yummy! I don’t buy everything organic, but I do love buying local as much as I can. The quality of the food is often much higher, and it feels good knowing I’m supporting my own community. If you haven’t gone to your own local farmer’s market yet, I encourage you to do it!

Have you ever felt frustrated with yourself because you have been trying to eat better or form a healthier habit, but you find yourself slipping back into old patterns over and over? If so, this post is for you.

I want to share a personal experience that I hope will be inspiring. For the last two years I have been playing a silly game with my Jiu Jitsu instructor. I have been attempting to sneak attack him from behind by jumping his back and trying to collar choke him. As you can see he is about twice my size. And his defenses are very good (he is black belt for a reason). I failed to accomplish this mission over, and over for at least two years. Until this week I succeeded. The secrets to my success apply to any goal you are trying to achieve. So here they are:

1.) Don’t be afraid of failure, this is how we learn
2.) If something doesn’t work, figure out why and make adjustments moving forward
3.) Don’t take yourself too seriously—don’t waste time beating yourself up if you do fail. 4.) Don’t let yourself get discouraged. Have fun instead.

Often I find my clients make healthy eating and meal planning more complicated than it really needs to be. People often have unreasonably high expectations for what their meals need to look like. This is no longer the Norman Rockwell era where one adult stays home and cooks and cleans all day, while the other brings home the bacon. This is leaving most of society feeling overwhelmed and overworked. While I don’t have a magic solution for inflation or the financial pressures people feel, what can be done is simplification. We have had a nasty cold running through our house for weeks, I’m still not back to normal from getting Covid the beginning of the year, and I had my arms full today of other adult responsibilities. I knew today was not a day to plan an elaborate meal for dinner. So I made mini pizzas using frozen roll dough, dumped all the veggies on it, and called it good. And you know what? It was delicious, no one complained, and we got what we needed. Most importantly, I didn’t wear myself out doing yet another adult task. We didn’t eat out, and had a wonderful meal as a family.
