Creamy Chicken and Broccoli Skillet
3 servings; per serving:
1 leaner, 1 healthy fat, 2 greens, 3 condiments

Ingredients:
27 oz Raw Chicken breast ~Yields 18 oz cooked (3 leaners)
1 tbsp olive oil divided (3 healthy fats)
1/4 tsp ground pepper to taste (1/2 condiment)
1/8 tsp sea salt (1/2 condiment)
1/2 tsp Italian seasoning (1/2 condiment)
4 cloves garlic minced (4 condiments)
1 1/2 cup almond milk (1 1/2 condiments)
1 tbsp almond flour (1 1/2 condiments)
3 cups (9.3 oz) broccoli head chopped (6 greens)
2 tbsp fresh parsley chopped (1/2 condiment)
Lemon wedges, optional

Directions:
Rub the chicken with the seasonings on all sides.

Heat 1 tablespoon of oil in a large pan over medium-high heat. Cook the chicken until golden-brown and cooked through, about 6-7 minutes per side. Set aside and cover to keep warm.

In a small bowl, whisk the almond milk and flour until smooth.

To the same pan, heat the remaining oil, over medium heat. Add the garlic and cook for up to 1 minute.
Pour in the almond milk mixture and stir; you should see the sauce getting thicker almost immediately as it heats up.
Add broccoli and cook for 6-8 minutes, or just until tender. Return the chicken back to the pan and continue to cook for a couple of minutes to heat up.

Garnish with chopped parsley and lemon wedges, if desired.

This is true in all aspects of life. I found excuses for years to not eat right. I'm still not perfect but breaking old habits forming new ones takes time and continued effort. The older I get, the more important it becomes.

Yummy & Healthy pepper 🫑 sandwiches 😋

INGREDIENTS

• 1 medium red bell pepper/ 149g
(2 veggie servings)
• Romain lettuce leaves/47g
(1 veggie serving)
• mashed avocado 42g
(1 healthy fat)
•1 tablespoon cream cheese
(1 condiment)
•1 teaspoon horseradish (optional)
(1 condiment)
•½ teaspoon black sesame seeds or Everything Bagel Seasoning
(1/2 condiment)
•5 oz low sodium sliced turkey (I use Kirkland brand from Costco) (3/4 leaner protein)
•2 slices/ 1 oz of cheese (I used Gouda; 1/4 lean)

INSTRUCTIONS

Step 1: Slice the peppers in half lengthways. Remove the stalk and seeds.
Step 2: Mix the cream cheese and horseradish, if using. Spread the cream cheese mixture across the inside of both pepper halves.
Step 3: Mash the avocado and season with a little sea salt. Add into the peppers and sprinkle over the sesame seeds.
Step 4: Add the meat, cheese and lettuce leaves. Option to slice in half crosswise to eat

Spicy Jack Snacks
1 Serving (16 Jack Snacks) with 1 Lean and 1 Green or
2 Servings (8 Jack Snacks) with 1/2 Lean and 1/2 green

Ingredients:
1 cup reduced-fat Monterey jack cheese
½ cup jalapeno, 16 slices

Directions:
Preheat oven to 350º. Place a sheet of parchment paper on a metal cookie sheet.
DO NOT use a silicone/silpat sheet, waxed paper or foil (unless it’s the special non-stick foil) to bake these or they will not cook properly.
Using a tablespoon, scoop up 1 T. of cheese and make a small pile on the parchment. Press it slightly flat. Repeat 15 more times. Place a slice of jalapeno on top of each pile. Pop into 350º oven for about 10-12 minutes.
Brown them a bit more for a firmer snack to serve at parties. These are somewhat pliable if under browned. Allow them to completely cool and fully firm up before removing from the pan for best results.
