This week Rachael whipped up a Low-Carb Tamale Pie, and it is the ultimate soul-warmer for this cold weather! 🥘❄️ It’s got all those bold Mexican flavors but with a cheesy cauliflower topping that’s a total game changer.

Ingredients
The Base:
17.5 oz Ground Beef (95% lean)
1/2 Onion, diced
1/2 Red Bell Pepper & 1/2 Green Bell Pepper, diced
1 stalk Celery, diced
3/4 cup Canned Tomatoes
2 cloves Garlic, minced
Spices: 1 tsp Cumin, 1 tsp Chili Powder, 1 tsp Dried Oregano, Salt & Pepper
The Topping:
1 small head Cauliflower
1.5 cups Cheddar Cheese (divided)
1.5 tbsp Olive Oil
Quick Instructions
Sauté: Brown the beef with the onion, peppers, and celery until tender. Add 1 clove of garlic and season.
Simmer: Stir in tomatoes and spices. Simmer for 5 mins, then stir in 1/2 cup of cheddar cheese.
Prep Topping: Boil cauliflower until soft. Blend in a food processor with the remaining garlic, olive oil, remaining cheese, salt, and pepper until smooth.
Assemble: Pour the meat mix into an oven-proof dish. Spread the cauliflower mash on top.
Bake: Bake at 400°F (200°C) for 25 minutes until golden and bubbling!
