Today’s yumminess yummy 😋 Broccoli Egg White Omelette with Avocado & Cucumber

A fluffy egg white omelette packed with broccoli, served alongside creamy avocado and crunchy cucumber — simple, nourishing, and satisfying.

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬

4 egg whites
1/2 cup broccoli florets (steamed or finely chopped)
1/2 ripe avocado, sliced
1/3 cucumber, cut into sticks
Salt & pepper to taste
1/2 tsp olive oil or cooking spray

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬

Prep the Broccoli:
Steam or microwave broccoli until just tender, about 3 minutes.
Chop into small pieces if needed.
Cook the Omelett:
Heat oil in a nonstick pan over medium heat.
Pour in egg whites, season with salt and pepper.
Add broccoli evenly over the eggs.
Cook for 3–4 minutes, fold gently if desired, and cook 1 more minute until set.

Prepare the Sides:
Slice avocado and cucumber.

Season lightly with a pinch of sea salt (optional: drizzle lemon juice over avocado).

Assemble:
Plate omelette with avocado slices and cucumber sticks.

Serve warm, optionally with hot sauce or a squeeze of lemon.
