We wish all of our wonderful Sisters of Mercy a joyous Mercy Day!

We were honored to treat our Sisters to a luncheon yesterday to celebrate the founding of their order. It was back on September 24, 1827, that Catherine McAuley opened the House of Mercy on Baggot Street in Dublin, Ireland. Her mission was to serve the sick, the poor and the uneducated. Three years later, Catherine and her companions became the first Sisters of Mercy, establishing a religious congregation dedicated to this mission.

The order has grown and expanded over the last 198 years, bringing Catherine's vision of mercy, compassion and service to communities across the world.

The extension of St. Joseph's Hospital and its value to the community went beyond the medical and even beyond the spiritual. The cheese biscuit tradition began sometime after 1948, the first year of Miss Patsy Howard's career at St. Joseph's Hospital. Howard made huge batches for the day and night shifts -- always on payday.

They always ran out -- there was no such thing as a "leftover" cheese biscuit. Though Miss Patsy retired in 1987, the tradition of oven-fresh cheese biscuits on payday continues today for coworkers and visitors at St. Joseph's Hospital.
