After a successful start in business, my lifelong passion for nutrition and cooking inspired me to pursue my Masters in Public Health Nutrition and become a Registered Dietitian. Mother to four girls I look at nutrition holistically, emphasizing healthy living over fad diets and exercise binges — and I practice what I preach. To me, Nutrition is not a 'one size fits all' methodology. I take a very personalized, non-judgemental approach in the way I work with my clients. After all, in the words of George Bernard Shaw, "life isn't about finding yourself, its about creating yourself".

Craving a nutritious, crunchy yet creamy salad? I have the perfect one for you.

RECIPE:
1 bunch celery, chopped
1 large Honeycrisp apple, diced
1 large cucumber, diced
1 bunch Fresh parsley, chopped fine
Handful micro greens
8-10 pitted medjool dates, chopped
1/2 cup chopped pecans

For the dressing:
1.5 cups shaved Parmesan
1 bunch freshly chopped dill
2 -3 large lemons, juiced
1/2 cup mayonnaise
1/4 cup avocado oil
1 tsp. Salt
1 tsp pepper
2 cloves garlic, minced
2 tsp. Maple syrup

Add all your salad ingredients into a bowl. Mix together all the dressing ingredients in another bowl till smooth. Pour over salad and toss.

If you are looking to decrease calories, you can use low-fat mayonnaise and serve the dressing on the side so that you can control how much you consume.

You will love this healthier version of a chicken wrap that I saw from . So I had to share it with you.

Ingredients
1 Zucchini
50g Gouda Cheese Light
1 Egg
1 Tomato
150g Chicken Breast
A Branch Rucola

Instructions
1. Place the zucchini slices in a tray, lay them down to form a square with some of them interwoven, and cover them with the egg and cheese.
2. Throw them in the oven until the cheese is melted and brown.
3. Flip your zucchini tortilla to leave the cheese outside, and put the rest of the ingredients on top.
4. Fold in half and enjoy.
