The power of a leftover list: My fridge and cupboards feel empty today. After doing a quick inventory of foods or “leftovers” I already have on hand, it suddenly seems like I have plenty of food! I was able to make a menu of 6 dinners and a snack from mostly ingredients I already have. A quick way to do a list is to walk through your kitchen and dictate every ingredient you see. It takes about 5 minutes or less! đŸ“‹đŸ„—

A snippet from my week of cooking: Romesco soup with charred peppers, Wild mushroom bok choy stir fry, a Frenchie named Stitch, a trio of sauces, Sockeye salmon, Roasted rainbow carrots, Rosemary mashed potatoes, Black bean enchilada bake, Roasted golden beets, Walnut taco wraps, Red pepper salsa, Vegan tuna nori rolls, and last but not least Walnut and pine nut cinnamon ice cream. Whew!

When life gets too busy but you still want to eat healthy, try my no-planning easy meal prep approach. These past few weeks have been super busy for me, and I haven’t felt like making a meal plan, a grocery list, or looking up recipes. This week I took a different approach and just winged it!
