Play with your muffins! When preparing them that is. Try different fruits and flours. These have no cow milk or oil. Apple sauce and coconut milk instead. Different flours are fun to experiment with also. Have fun!

Blueberry Apple muffins. I used coconut milk and applesauce instead of cow milk and oil. Also used brown rice flour in place of half the white flour. Experiment with oat flour, spelt flour, buckwheat flour...so many choices!

Try butternut squash soup! Microwave a butternut squash 2 minutes to soften. Cut off ends, peel with potato peeler and cube into 1 inch pieces. Cut a couple shallots in half (peel), peel and slice a 1 inch piece of ginger. Toss all with a little olive oil, sea salt and fresh black pepper. Roast 50 minutes in a 400 often. Mash, blend or use an emulsifier and then add chicken broth to desired consistency. Tastes like fall!

Just finished a summer of weekly nutrition classes with 3 wonderful women who are dedicated to making their lives the healthiest and happiest. We wrapped up our 12 sessions with a tasting frenzy from around the world; a little kimchi (Korea) fermented and spicy delight; tomato feta salad; nori (Japan-sea vegetable) salty and full of minerals; Kombucha (Russia?) fermented tea good for digestion; marinated garlic cloves and black garlic (needless to say we should have added a bit of parsley to cleanse the pallet). :) Anyone interested in having a month of weekly meetings involving friends, fun, food talk and total nutrition support for your lifestyle changes, give me a call!
