Looking for a quick breakfast that keeps your energy steady?
These Mediterranean Egg Muffins are an easy meal-prep win.

They’re:

Rich in antioxidants and healthy fats
Packed with protein and fiber
Supportive for brain, heart, and hormone health
Simple to prep for the week
Spinach adds iron, bell peppers bring vitamin C, and olives offer calming polyphenols.

Ingredients
2 tbsp olive oil
3/4 cup diced onion
1/4 tsp salt, divided
1 red bell pepper, diced
1 tbsp chopped oregano
8 eggs
3/4 cup feta
1/2 cup low-fat milk
1/2 tsp pepper
2 cups chopped spinach
1/4 cup sliced Kalamata olives

Instructions
Preheat oven to 325°F and grease a 12-cup muffin tin.
Sauté onion with a pinch of salt for 3 minutes. Add bell pepper and oregano; cook 4–5 minutes.
Whisk eggs, feta, milk, pepper, and remaining salt.
Fold in spinach, olives, and cooked veggies.
Divide into muffin cups and bake about 25 minutes until firm.

Perfect for busy mornings, blood sugar balance, and nutrient-dense snacking.
