CAPRESE SALAD

Ingredients:
4 oz fresh mozzarella between 3 to 6 g fat per oz, cubed (1 Lean)
1 cup baby spinach (1 Green)
1 cup or 180 g Roma or heirloom tomatoes, sliced (2 Greens)
1/4 cup chopped fresh basil (1/4 Condiment)
1/8 tsp salt (1/2 Condiment)
1/8 tsp pepper (1/4 Condiment)
2 tbsp Walden Farms Balsamic Vinaigrette Dressing (1 Condiment)

Directions:
Place a bed of greens on a plate. Season tomatoes with pepper and salt then layer them over spinach. Add mozzarella on top of tomatoes. Drizzle dressing over tomatoes and cheese. Top with fresh chopped basil. Enjoy!

๐Ÿ• CHICKEN PIZZA ROLLUPS ๐Ÿ•

Makes 4 servings-
Per serving:
1 Leaner
2 Greens
1 Condiment

Ingredients:
4 โ€“ 6 ounces cooked skinless chicken breast
ยฝ Teaspoon garlic powder
ยฝ Teaspoon italian seasoning
ยผ Teaspoon onion powder
ยผ Teaspoon salt
ยผ Teaspoon pepper
2 ounces turkey pepperoni
ยพ Cup reduced fat mozzarella cheese
2 Cups Raoโ€™s sauce
Instructions
Preheat oven to 350 degrees.
Pound chicken breasts with mallet to thin out for easier rolling.
Whisk the seasonings together and sprinkle over the breasts.
Place 4 slices of pepperoni on each breast.
Sprinkle the mozzarella over the pepperoni.
Pour 1 cup of sauce in the baking dish and spread around to cover the bottom of dish.
Roll each breast up and place seam side down into dish.
Pour the remaining sauce over the chicken.
Bake 45 minutes.

Whatโ€™s the BEST part of the pizza??? The toppings!!!! This is ALL toppings!! Ignore how loooong this recipe looks...it's SUPER simple and SUPER delicious!!

Pizza Casserole
Makes 5 servings
Per serving
1 Lean protein
1 1/2 vegetables
ยพ condiment
Ingredients:
1 can (14.5 oz.) low sodium diced tomatoes (do not use petite dice)
18 ounces uncooked turkey Italian sausage
Non-stick pan spray
1/2 tsp. dried oregano
ยผ tsp salt
ยฝ tsp fresh-ground pepper
12 oz. fresh mushrooms, washed and cut into thick slices (I used brown Cremini mushrooms.)
1 3/4 cups grated Mozzarella cheese (I used part-skim mozzarella)
15 slices turkey pepperoni, cut in half
Instructions:
Preheat oven to 400F/200C. Spray an 8 inch x 11 inch glass casserole dish with non-stick spray or olive oil.
Pour the diced tomatoes into a colander placed in the sink and rinse with cold water. Let tomatoes drain a minute or two, then spread them out on paper towels to dry (or blot dry with another paper towel on top.) While tomatoes dry, heat 2 tsp. olive oil in a large non-stick frying pan, squeeze the sausage out of the casing, and cook sausage over medium-high heat until it's nicely browned, breaking it apart as it cooks. (I use an old-fashioned potato masher to break the sausage apart.)
While sausage cooks, wash mushrooms, pat dry, and slice into thick slices. When the sausage is done make a layer of sausage in the bottom of the casserole dish and top with the drained tomatoes, spreading them out over the top of the sausage. Season with dried oregano, salt, and fresh-ground black pepper. (I didn't use much salt.)
Rinse out the pan if needed, then heat the other 2 tsp. of olive oil over medium-high heat. When the pan is hot add the mushrooms and cook, stirring a few times, until all the liquid is released and the mushrooms are starting to brown. Layer the mushrooms over the sausage-tomato mixture.
Cut pepperoni in half. Sprinkle the grated Mozzarella over the top of the casserole and lay the pepperoni pieces on top of the cheese, spacing them evenly so the whole top is covered with pepperoni. Bake about 25 minutes, or until the cheese is melted and starting to brown. Serve hot.

A beautiful and fresh salad to help beat the heat.

Asparagus Salad
Ingredients:
*4 oz moderate-fat cheese, such as part-skim mozzarella
*ยพ cup (9 medium 5-ยผโ€ to 7โ€ spears) asparagus
*ยพ cup (2 medium 2-3/5โ€) tomatoes, chopped
*2 Tbsp fresh basil, finely chopped
*2 Tbsp Newmanโ€™s Ownยฎ Lighten Up Balsamic Vinaigrette Dressing
*ยผ tsp freshly ground black pepper
Directions:
Trim ends from asparagus, chop tomatoes, and shred cheese or cut into cubes. Bring medium-sized pot of water to boil, drop in cleaned asparagus, and boil 5 minutes or until asparagus is al dente (tender-crisp). Drain asparagus and quickly put into a bowl or pot of ice cold water (this stops asparagus from over-cooking). Add remaining ingredients to cooled, drained asparagus and chill. Serve chilled.
Makes 2 servings
Per serving: 1 lean protein, 3 vegetables, 3 optional condiments

Cheesy Egg & Broiled Tomato Sandwich ๐Ÿณ๐Ÿ…

2 Revolution Rolls*
1 Egg
3.17 oz Tomato
1/3 C 2% Shredded Cheddar
1/2 tsp Everything but the Bagel seasoning

[1 LEAN, 1 GREEN, 1.5 CONDIMENTS]

*I made these rolls last week, threw two of them in the freezer, and they thawed great. Once thawed, I popped them in the air fryer for 2 minutes to crisp them up and topped with seasoning.

Cloud Bread aka Revolution Rolls

Ingredients:
3 eggs at room temp
3 tablespoons light cream cheese at room temp
A pinch or 1/16 tsp cream of tartar (you can use white vinegar or lemon juice as a substitute)
1 packet splenda (or 1/2 pack stevia)

Instructions:
Preheat oven to 350 degrees. Separate egg whites from egg yolks, putting whites in one bowl and yolks in another bowl. Add cream of tartar (or vinegar or lemon juice) to whites. Beat whites on high until stiff peaks form. Set aside.
Add cream cheese and splenda to yolks. Whisk yolk mixture until blended. Gently whisk yolk mixture into whites being careful to not over mix and make the whites fall. On a cookie sheet lined w parchment paper, make six equal sized blobs, not touching.
Bake at 350 for 30 to 35 minutes (Mine cooked in 25 minutes). They are good warm, but awesome cold and can be toasted without problem!
Freeze the left overs in plastic wrap or individual sandwich bags or keep them in the fridge for up to 5 days in a large Ziploc bag. Toast them to make them crispy again!

Makes 6 Rolls or 3 servings
(2 Rolls is 1/3 Lean and 1.33 Condiments if you are on my program for creating health)
If using regular cream cheese instead of light cream cheese, 2 rolls is 1/3 Lean, 0.16 Condiments, and 1 Healthy Fat

Talk about a yummy, super easy and convenient (from foods generally on hand) meal! Add some extra spice by substituting some red pepper flakes ๐ŸŒถ for the black pepper.๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

Shakshuka (Mediterranean eggs and tomatoes)
1 clove garlic = 1 condiment
1 tablespoon minced onion = 1 condiment
Saute in pan together and add
1/2 cup red bell pepper = 1 veg
1/2 cup tomatoes cut small = 1 veg
1/2 cup tomatoes sauce = 1 veg mixed with 1/2 cup water
Mix together and bring to boil
Break on top 3 whole eggs = 1 lean
Bring to boil and reduce to simmer.
Add 1/8 teaspoon salt and 1/8 teaspoon black pepper and 1/8 teaspoon cinammon to = 1 condiment
Let simmer until eggs are completely cooked.
Enjoy!!!!
