SMOKED PAPRIKA PORK LOIN WITH ROASTED CAULIFLOWER STEAKS & GRILLED PEACH

Ingredients
Protein (4 oz)
• 4 oz lean pork loin, sliced into ½-inch medallions
Required Vegetable (4 oz)
• 4 oz cauliflower, cut into thick "steaks"
Fruit (4 oz)
• 2.5 oz peach, halved and grilled (cooked into the meal)
• 1.5 oz fresh raspberries (served on the side to complete the 4 oz fruit portion)
Free Vegetables (do not count toward vegetable portion)
• 4–5 mushrooms, quartered
• Red onion, sliced into thick rings
• 3 cloves garlic, minced
• Fresh parsley, chopped
Seasonings
• 1 tsp smoked paprika
• 1 tsp garlic powder
• ½ tsp cumin
• ½ tsp onion powder
• Pink Himalayan salt
• Black pepper
• 1 tsp Worcestershire sauce
• Fresh rosemary sprigs
• 0-cal spray oil
Bread (optional)
• 1 Grissini breadstick
Instructions
1. Season the pork. Combine smoked paprika, garlic powder, cumin, onion powder, salt, and pepper. Coat pork medallions generously on both sides.
2. Roast the cauliflower. Preheat oven to 425°F. Place cauliflower steaks on a baking sheet, spray with 0-cal oil, and season with salt, pepper, and garlic. Add rosemary sprigs on top. Roast 18–20 minutes, flipping halfway, until golden and tender.
3. Sear the pork. Heat a cast-iron skillet over medium-high, spray with 0-cal oil. Sear pork medallions 3–4 minutes per side until cooked through with a nice crust. Add Worcestershire sauce in the last 30 seconds to glaze. Remove and rest.
4. Grill the peach. Spray peach halves with 0-cal oil and place cut-side down in the hot skillet. Grill 2–3 minutes until caramelized with grill marks.
5. Sauté the mushrooms. In the same skillet, add mushrooms and red onion rings. Cook 3–4 minutes until golden and softened.
6. Plate it up. Lay the cauliflower steaks on the plate and fan the pork medallions alongside. Top with sautéed mushrooms and red onion rings. Place the grilled peach halves on the plate. Garnish with fresh parsley. Serve with fresh raspberries on the side and a Grissini breadstick if desired.
Notes
• Free vegetables (mushrooms, garlic, red onion, parsley) do not count toward the 4 oz required vegetable portion
• Fruit note: 2.5 oz peach is grilled into the meal. 1.5 oz fresh raspberries are served on the side to complete the full 4 oz fruit portion
