Easy Lemon Garlic Shrimp with Zucchini noodles. Here is a quick recipe for healthy dinner. First , spiralize some zucchini to create zucchini noodles. Set aside. In a saucepan, heat up some grass fed butter and minced garlic until it’s fragrant, and add zucchini noodles in the saucepan. Cook at medium heat. While your zucchini noodles are cooking, peel and de-vein some jumbo raw shrimp, pat dry and season with cracked pepper, a pinch of salt. Get a cast iron skillet hot and sear shrimp with grass fed butter and minced garlic over medium high heat (two minutes on each side). When done cooking , add fresh lemon juice to the shrimp and serve on top of your cooked zucchini noodles.

Making a nourishing soup is easier than it seems. Buy a free range rotissserie chicken, shred up the meat for “emergency protein” that can be added to salads or protein bowls for the week, and reserve the bones (and fat!). Simmer bones and fat for 3 hours on low heat to create a bone broth /stock. Strain broth and add your favorite vegetables (I use a mirepoix , zucchini, fresh ginger, garlic, mushrooms and garbanzo beans) , and cook until tender. Freeze portions for a cozy nourishing snack or meal. 🤩
