This past week I had the awesome opportunity to fly out to Nebraska with the Nebraska Beef Council to learn all about beef production from pasture to plate. Along with other professionals in the food industry I got to see first hand how the cows are raised and fed, learn about farming and growing feed, processing meat and all of the passionate people working in these areas and the amazing technology that goes into those processes. There’s much too much information to share here, but if you have any questions about beef I would love to share the wealth of information I’ve gained!

Happy National Nutrition Month! Today I am celebrating 6 years in business at Jacqui Campbell Nutrition!

A little bit about me and my practice...I found my way to the nutrition field out of a love for food and helping people. I practice nutrition with a weight neutral approach meaning I'm not here to tell you how much to eat to be an exact weight. I'm here to support you in making sustainable changes to improve your physical and emotional health, improve your relationship with food and be an ally in your health journey.

I treat every patient individually and take into consideration more than just how you eat and move your body. My goal is to have every patient leave my office feeling good, inspired and empowered to make the changes to better themselves.
My specialties include diabetes, eating disorders and disordered eating, but I also work with people with cardiovascular disease, IBS and other GI issues.

In addition to working one-on-one with individuals, couples and families, I work with groups of any age. From story and snack activities with playgroups to presentations on managing diabetes at senior centers. I also do consulting work for Big Y as their recipe specialist editing and testing recipes and occasionally doing community events in and outside their stores.

Between running a full time business, consulting and raising 2 awesome little boys you won't see super regular posts here, but know I am always available to schedule an appointment! You can learn more and contact me through my website www.jcampbellnutrition.com

Busy weekend with no time to meal prep? Me too so I made a quick stop at Costco to stock up on our weekly fruit and dairy, grabbed a veggie platter on sale, my favorite salad kit and a rotisserie chicken. Added frozen green beans, frozen sweet potato (just mashed it and added a little butter, brown sugar and cinnamon) and some stuffing to the chicken for a super simple dinner. I shredded the rest to throw on top of salad, maybe make chicken salad or use for another dinner later this week.
