Quick veggie packed breakfast to start the day with steady energy and a happy gut! Keep the ingredients on hand for low decision mornings!
1 diced zucchini
1 diced potato
1 cup spinach
1 bell pepper
2 eggs
Sauté zucchini and potato in light avocado oil. Season with salt and pepper. Add in your eggs. You can choose to scramble them in or just cook them as over easy. Whe the eggs are almost done add in your spinach and cook to desired wilt. I add my bell peppers last for the crunch but you can easily add these in with the zucchini and potato at the beginning if you prefer.
