This simple & beautiful appetizer is perfect for the holiday season. 👏🏻

⭐️RAW’s Pomegranate, Raspberry & Brie Bruschetta⭐️

Prep Time 30 minutes
Cook Time 20 minutes
16 servings
Calories 100 cal/serving

Ingredients

¾ Cup Pomegranate Seeds
½ Cup Raspberry Preserves
2 tsp Orange Zest
Dash Sea Salt
6 oz French Baguette, cut into 16 pieces
2 tbsp Olive oil
¼ tsp Ground Pepper
6 oz Brie Cheese, cut into 16 pieces
4 tbsp Fresh Basil, chopped

Directions

Combine pomegranate seeds, raspberry preserves, orange zest and salt in a small bowl. Cover and chill (up to 3 days ahead of time)
Preheat the oven to 350 degrees. Place bread slices on a baking sheet lined with parchment paper. Lightly coat both sides of bread with olive oil. Sprinkle with pepper. Bake for 10 minutes, flip bread slices over.
Top bread with Brie slices, and bake an additional 8-10 minutes until cheese is softened.
Remove bread from the oven. Top with the pomegranate mixture.
Add chopped basil plus additional salt, if needed.
Serve warm

Bok Choy is the main green in this Asian Sesame Noodle Bowl.

Maybe you’ve seen this hearty green in your produce aisle and skipped right over it to something more familiar. (Romaine, Kale, Iceberg…I’m looking at you 🫵🏼)

Bok Choy isn’t one that stands out among the leafy greens yet it has amazing health benefits!! 🤩
Bok Choy is high in Vitamins A, C and K, calcium, potassium, iron and fiber!

I use it in my Asian Sesame Noodle Bowl because
1. It’s fresh and very healthy. 🥬
2. Its strong leaf holds onto my Peanut Sauce like a champ. 🏆

Needing a hearty soup that will feed a crowd??? Love how this one can be adapted from Southwestern to Italian, depending on your tastes! 😍

❤️RAW’s Stuffed Pepper Soup❤️
Prep time: 30 minutes
Cook time: 35-40 minutes
8 Servings
Calories: 310 cal

Ingredients
1 tbsp extra-virgin olive oil
3 lg bell peppers, chopped
1 poblano pepper, chopped
8 oz white button mushrooms, sliced
1 med onion, chopped
28 oz fire roasted diced tomatoes
1 ¼ lb lean ground beef
2 cloves garlic, minced
3 tsp ground cumin (oregano)
2 tsp ground coriander (basil)
1 tsp ground pepper
1/2 tsp salt
5 C low-sodium chicken broth
1 C quick-cooking brown rice
¼ cup chopped fresh cilantro or (basil), plus more for serving

Shredded cheddar cheese & crushed tortilla chips for serving
OR
mozzarella cheese, fresh basil & crusty French bread

Directions
Heat oil in a large pot over medium-high heat. Add bell peppers, poblano, mushrooms and onion and cook, stirring often, until starting to soften, about 10 minutes.
Push the vegetables to the edges. Add beef, garlic, cumin, coriander, ground pepper and salt to the middle and cook, crumbling the beef with a wooden spoon, until it’s no longer pink, 3 to 5 minutes.
Stir in broth, tomatoes and rice. Bring to a boil. Reduce heat to maintain a low simmer, cover and cook until the rice is tender, 15 to 20 minutes. Remove from heat and let cool for a few minutes.
Serve the soup topped with cheddar cheese, corn chips and cilantro, if desired.

Salads are about placing good combinations of ingredients together.

RAW’s Green Goddess Salad uses romaine, cucumber, tomato and chickpeas as the base. Topped with toasted almonds and diced Swiss cheese. Simple ingredients that work well together!

A fantastic part of RAW’s Ancient Grain & Kale Salad is my

Zesty Southwest Dressing! ❤️

1 C Olive Oil
1/2 C Red Wine Vinegar
2 tsp Cumin
1 tsp Chili Powder
1/2 tsp Salt
1/4 tsp Pepper
Just shake well and go!!

Definitely could add a pinch of cayenne, if you need a bit of a spicy kick! 💥

Either way, this dressing is flavorful enough to dress up kale VERY well!

Ever tried Farro??? This whole grain is packed with plenty of fiber and good carbohydrates.
It tastes great flavored with a peppery arugula, fresh mint and basil! Add some chopped artichoke hearts, pomegranate seeds (or cranberries) and pistachios!! I like to top mine with goat cheese! Yum!!!! 😋
For the Lemon Honey Dressing, use equal parts fresh lemon juice and olive oil plus 1 tbsp of honey. (Salt/pepper to taste)

It’s that easy!! 🙌🏻
