Good Livin’ in Puerto Rico 🌈☀️🌴

Reflecting on this last-minute getaway with my sister. We stayed at , such a beautiful place! Our time there was filled with daily yoga, nourishing food, nature therapy, and private Reiki sessions. We also spent a spontaneous beach day with 3 people we met at the retreat center—a perfect ending to our trip!

Zuppa di scarola e fagioli 🇮🇹 (escarole & bean soup)

A rainy day calls for making a quick batch of escarole and bean soup - one of my favorites! I love the simplicity of it, a quality found in so many authentic Italian dishes.

It’s hard to fathom that is has been 5 years without you, dad.

As I sit here and reflect on my growth over these past years, I've come to realize that your presence has never truly left. While the physical body may depart, the spirit and energy endure eternally.

My dad was, and continues to be, a force in this world, guiding my path with a newfound confidence. I often share with others that I feel an even closer connection to him now than ever before. Some may find it peculiar, but I talk to him all the time and notice signs around me as a form of him responding. He has reached out to me through mediums, both planned and spontaneous encounters, which have fundamentally transformed my perspective on life. When we open our minds to the realm of endless possibilities, clarity prevails. Before my dad's passing, I struggled to believe in much, even questioning the validity of mediums. However, now I know that there is so much more beyond the confines of this physical world.

Despite countless individuals advising against introducing another drastic change into my life when my dad passed—a notion that held merit—I made the conscious decision to resign from my job and embark on a path aligned with my dreams. After all, I have always appreciated a challenge and pursuing a nontraditional path. I sensed a calling that extended beyond the limits of my previous trajectory. I realize that perhaps this path has shaping itself all along, as I had always harbored a desire to help others. As a kid I had my own practice too. I made appointment cards for family members and friends to come for forms of healing in a sense. My dad’s favorite service was my elbow massages.

I write this to emphasize the importance of continually searching within yourself to ensure that you’re in alignment with your values and purpose. I've gradually learned to release any concerns regarding others' opinions and judgments. A dear friend and colleague recently reminded me that authenticity attracts the right clientele (thank you, Hillary). In the end, staying true to oneself always prevails.

Self-praise has always been challenging for me, yet today I find myself particularly proud of the work I've undertaken to embody my dad's philosophy of "Good Livin'" and share it with others. My mission is to assist people in experiencing their best selves. Therefore, I'd like to express my eternal gratitude to the clients who have chosen me as their guide by sharing some testimonials.

Sharing some Good Livin’ dark chocolate bark to help satisfy your cravings this week.

A client wanted a healthier option in his house as a nonrestrictive alternative to his children’s candy haul. He made this yesterday and loved it (what’s not to like?).

Restriction often leads to unhealthy thinking/behaviors. When you embrace a balanced lifestyle, you’re better able to indulge without guilt. And yes, that can include a little commercial Halloween candy as well. It’s good to think about what you’re able to invite in, rather than always focusing on what to cut out. I’m sure there are other health practitioners that disagree, but I’m all about building sustainable and realistic lifestyle habits. This client has maintained his weight loss goal without “dieting” - I call that a win ♥️.

Easy bark:
🍫 Melt dark chocolate/cacao. I prefer the double-boil method. (70% & up = healthiest*)
🍫 Pour melted chocolate in a baking pan lined with parchment paper.
🍫 Add toppings of choice (raw nuts, seeds, raisins, salt, etc.)
🍫 Once hardened, transfer parchment to a flat surface & cut into squares.

Lentil Soup: 3 ways

1. Mediterranean-inspired red lentil
2. Classic brown lentil (with an option for a twist)
3. Yellow lentil (Dal)

I experimented with different versions last week and can’t figure out which one I like best. So… I’m sharing my top 3. 🤗

Working on some plant-based recipes for a client and was pleasantly surprised by how delicious this cashew crema turned out. Excited to experiment with different variations.

What’s inside:
🌱Sautéed mushrooms, onion & bell pepper
🌱Roasted cauliflower & butternut squash (seasoned with cumin, paprika, chili powder, garlic powder, black pepper + avocado oil)
🌱Black bean, roasted corn, red onion, tomato, avocado, pumpkin seeds & rainbow slaw (dressed with fresh-squeezed lime juice, basic seasoning & EVOO)
🌱Optional add-in: Granny Smith apple thinly sliced into matchstick pieces (plain)

I used Ezekiel 4:9 tortillas (complete plant protein). Stoneground corn shells make a great gluten-free option.

Cashew Crema:
1 cup raw cashews (soak first if you don’t have a high-speed blender, such as a Vitamix or Ninja)
3/4 cup water
1 garlic clove
1 lime, juiced
1/2 lemon, juiced
Jalapeño & cilantro (sub with parsley if you’re not a fan of cilantro)
Black pepper (optional)
For a thicker sauce, use more cashews:water and or avocado.

Note: this can be used for meal prep! Store roasted veggies, slaw & sauce in the fridge. Make a quick wrap or a grain bowl during the week. The crema can also be transformed into a salad dressing by adding some oil & white wine vinegar.
