Cauliflower and Bacon Loaded Potato Salad Recipe ๐ฅ๐ฅ๐ฅ
Ingredients:
1 large head of cauliflower, cut into small florets ๐ฅฆ
6 strips of bacon, cooked and crumbled ๐ฅ
1/2 cup mayonnaise (preferably sugar-free) ๐ฅ
1/4 cup sour cream ๐ฅ
1/4 cup diced red onion ๐ง
1/4 cup diced celery ๐ฅ
1/4 cup diced dill pickles ๐ฅ
1/4 cup shredded cheddar cheese ๐ง
2 tablespoons fresh chives, chopped ๐ฟ
1 tablespoon Dijon mustard ๐ฏ
1 tablespoon apple cider vinegar ๐๐ถ
Salt and black pepper to taste ๐ง๐ถ๏ธ
Paprika for garnish (optional) ๐ถ๏ธ
Directions:
Prepare the Cauliflower:
Steam Cauliflower ๐ฅฆ:
Steam the cauliflower florets until they are tender but still firm, about 5-7 minutes. You want them to retain some texture. Drain and let them cool.
