The holiday season can be a busy and stressful time. Support your immune system well with a robust diet full of nutrients. Don’t add further stress by worrying about what you shouldn’t be eating.

· Focus on eating multiple vegetables each day.

· Don’t forget some fruit. Grapefruit is one of my favorites this time of year.

· Have small amounts of lean protein throughout the day. This helps keep you satisfied between meals so you can be more mindful of if/when you want to grab a holiday treat.

Happy Easter everyone!

Almonds are a great way to add some fiber and healthy fat to your meals.

If you prefer roasted almonds, it's best to roast them at 250-300 degrees to maintain their antioxidant capacity.

I prefer roasting them myself over purchasing roasted almonds likely prepared with high heat, added oils and salt.

Raw or roasted almonds go great in yogurt, salads and oatmeal, or as a breading for fish and chicken.

Yesterday I made a salad with: leaf lettuce & green onions fresh from the garden, red bell pepper, tomatoes, carrots and celery as well as some roasted almonds. It was delicious!
