I absolutely love sprouts and recently I started growing my own. In a matter of 4 days on the countertop! My sister had introduced me to this cool idea about a year ago and needless to say there are always sprouts growing on the counter top now. Super easy and inexpensive. This is by far the best oatmeal mix that I have found. It has all the healthy carbs without all the bad sugars. It is so yummy too! I cook it as directed on the package, however I add a lil more yumminess. Once o add the oat mix to the water I add 1/2 tbsp. Of monk fruit sweetener and 1 tsp of vanilla extract. Then once it is done cooking And transferred to a bowl I add sugar free maple syrup to taste ( start with a lil and add as desired) then tip with a few berries. So, healthy, quick, easy…and DELICIOUS!

Something that I used to make, but I forgot about until my amazing aunt Debbie Trask Boisvere reminded of it is Chia Pudding. I now make it on a regular basis because it is a healthy and quick breakfast or even dessert! Chia seeds are an awesome source of omegas that are so good for you and take on whatever environment that you put them in. Lol Well, last night I put them in chocolate and omgoodness...amazing! Here is a recipe for something that tastes naughty but really isn't. This recipe is Mom approved...which is even better than kid approved because as I have learned recently, parents can be harder to please than kids lol!

I have created a Chocolate Raspberry Chia pudding that is so yummy that it can be a breakfast, a snack or a dessert!

First off, you need to make the raspberry "jam".

Place 1/2 cup of frozen raspberries in a pot and cook until they start simmering. Add 1 tbsp of Monk fruit sweetener and 2 tbsp of lemon juice. (I have recently learned that lemons have a natural pectin which thickens other fruits). Once the raspberries completely break down set aside.
Then in a bowl combine the following ingredients:

1 cup Coconut milk ( I use Trader Joe's Coconut Creamer)
2 tbsp of sugar free Maple syrup
1/4 cup Cocoa powder
1/2 tsp Almond extract
1/3 cup Chia seeds

Put this bowl in the refrigerator and let it sit for 15 mins. This will allow it to solidify slightly. When you take it out of the fridge stir it to spread the chia seeds even better. Then pour half of the mixture into a mason jar or other container. Add the jam mixture and then top with other half of chocolate chia pudding. Then top again with the raspberry jam mixture. Put this layered yummy goodness back into the fridge to completely solidify overnight or at least for 4 hours.

Hi Everyone, I want to give you a little background on why I am starting this page and tell you what to expect if you follow it. I have been in the food industry my entire life and then I went to school to be a massage therapist. This is where I received my education in nutrition which really opened my eyes to what I was putting or not putting into my body. Over the course of my life I have tried every "diet"...Weight Watchers, Advocare, Juicing, Keto etc. the list goes on. Always with one goal...to be healthy from the inside out. However, I believe that my experience and "training" that I went through prepared me for now. Recently, my mother was hospitalized with congestive heart failure. In addition to this new condition, we found out that she is now diabetic as well. When she was released from the hospital her cardiologist told me that he suggests a plant-based diet for her because she needs to lower her sugar intake, her sodium intake and her cholesterol intake. So, I took on the challenge! With his permission I added seafood and eggs back into her meal plan which would make it a pescatarian diet. Normally this wouldn't be too difficult of a task, however my mother really likes her unhealthy comfort foods so I knew that I had to really try to create a healthy meal plan that tastes good so that she can sustain this lifestyle and not feel deprived. So, that is what I am doing on a daily basis and it is pretty fun! What I have found is that low carb foods have quite a bit of added sodium and vegetarian foods have quite a bit of sugar and sodium...and don't even get me started on the cholesterol. So, I spend a lot of time reading labels and being creative. If I can help one more person to be a healthier version of themselves then this page is absolutely worth it!
