Deep health Thoughts for the day: How bad is the oil you're consuming from your favorite fried foods? And what about Kettle Corn? Yikes!

Deep-frying and reheating cooking oils can create carcinogens, including: Polycyclic aromatic hydrocarbons (PAHs), Aldehydes, Acrylamides, and Acrolein.
When oil is reheated, it produces byproducts that contain PAHs and aldehydes. These byproducts can react with air to create oxidized compounds that may be toxic and carcinogenic. Repeatedly reused oil breaks down triglycerides, which releases acrolein, a toxic chemical with carcinogenic properties.
Cooking fumes also contain over 200 harmful gases, including PAHs and aldehydes, which are known to be carcinogenic, mutagenic, and tumorigenic. Exposure to cooking fumes in a non-ventilated environment has been linked to lung cancer in non-smokers.
Some oils with higher smoke points, like avocado, peanut, or refined olive oil, can be used for sautéing or roasting to reduce the risk of acrylamides. Coconut oil is resistant to oxidation and polymerization, but it has a lower smoke point and is only recommended for one-time shallow frying.

Dr. Graves is a licensed Naturopathic Physician with a clinical focus in endocrinology and immune-related disorders. This includes being an expert in thyroid and adrenal conditions. He also uses Naturopathic Medicine to treat autoimmune diseases, infection recovery and related health problems.

Dr. Graves is a graduate of Bastyr University and has been in clinical practice for over 15 years. He has worked in a number of integrative clinics including the Tahoma Clinic in Tukwila, WA with Dr. Jonathan Wright and other integrative medicine doctors. He has been practicing in Spokane, WA since 2010. Early in his career he focused on pediatrics and family medicine in the California Bay Area.

Before medicine he had a career in engineering and technology in Silicon Valley, trained in massage therapy, and completed a Bachelor of Science in Nutrition. A longtime advocate for food as medicine, he has clinical expertise in low-carb and ketogenic diets to treat health conditions like epilepsy, diabetes, and cognitive decline. As an older competitive athlete himself, he is also an expert in sports nutrition, training and recovery.

His philosophy follows the foundations of Naturopathy, including “find and treat the cause.” He acknowledges “the healing power of nature,”
seeking balance spiritually and physically. When not at work he’s staying active, gardening, cooking and spending time with family.
