⭐️Here’s my version of Jennifer’s famous salad: 1 cup uncooked bulgur wheat. 3 cups vegetable broth or water. 1 English cucumber, diced 1 (15 ounce) can chickpeas, drained and rinsed. 1/2 small red onion, diced. 1/2 cup fresh parsley, finely chopped. 1/2 cup fresh mint leaves, finely chopped. 1/2 cup shelled pistachios, chopped. 4 ounces crumbled feta cheese. Salt and pepper. 1/3 cup fresh lemon juice. 1/3 cup extra virgin olive oil. 1. In a medium saucepan, combine the bulger wheat and broth or water. Bring to a boil,reduce heat to low, cover and cook for 10 minutes. Remove from heat and let stand,covered, for 5 minutes. Transfer to a large bowl and allow to cool for 15 minutes. 2. Add the cucumber, chickpeas, onion, parsley, mint leaves, pistachios, and feta cheese tothe large bowl with the bulgur wheat. Season with salt and pepper. Toss to combine. 3. Add the lemon juice and olive oil and toss again so everything is evenly coated in thedressing. 4. Just in time for the big game, we have a healthy, lightened up Buffalo Chicken Dip! 🏈😛Here’s what you need:
✔️2 cups shredded chicken
✔️1/2 cup nonfat Greek yogurt
✔️8 ounces Neufchatel cheese, softened
✔️4 ounces crumbled bleu cheese (about 1 cup)
✔️1/2 cup buffalo hot sauce
Mix it all together in a bowl, transfer to a baking dish, and bake for 20 minutes at 350 degrees F. Couldn’t be easier and it’s still super creamy and delicious, even though it’s significantly lighter than traditional Buffalo Chicken Dip!

🥚10-MINUTE RICOTTA SCRAMBLE🥚
3 eggs
Butter
Scoop of ricotta cheese
Salt and pepper
Truffle oil
Crushed chili peppers
Grated pecorino romano cheese
Arugula micro greens
1️⃣ Whisk your eggs with salt and pepper
2️⃣Melt a little butter in your pan and add the eggs and top with ricotta cheese
3️⃣Scramble the eggs and cheese until the eggs are fluffy and cooked
4️⃣Place the scrambled eggs on top of toasted sour dough bread and top with a little more salt and pepper, a dash of truffle oil, some crushed chili peppers,grated pecorino romano cheese, and micro greens. ENJOY!
