Start your day with a high protein meal!
Starting your day with adequate protein is crucial because it will help you maintain healthy blood sugar control throughout the day, which translates into more stable energy levels, a better mood, and reduced sugar cravings throughout the day. While eggs are great for breakfast, it’s nice to switch things up sometimes with a non-egg breakfast. These blueberry turkey breakfast sausages offer a protein-rich breakfast with a unique but delicious flavor. Best of all, you can prepare batches of these sausages in advance, store them in the freezer, and defrost them the night before, so they’re ready to go for breakfast the following morning.
Ingredients:
- 1 lb Extra Lean Ground Turkey
- 1 garlic clove, minced
- 1 tbsp Italian seasoning
- 1 tsp ginger, peeled and minced
- 3/4 tsp sea salt
- 1/2 cup blueberries
- 1 tbsp coconut oil
Instructions:
1. Mix the turkey, garlic, Italian seasoning, ginger, and salt in a large mixing bowl. Mix until combined. Gently fold in the blueberries. Form the meat mixture into thin, even patties, about 4 inches in diameter.
2. Heat the coconut oil in a large frying pan over medium-high heat. Cook the sausage patties for four to five minutes per side until cooked. Serve and enjoy!
Tips:
- Keep leftovers refrigerated in an airtight container for up to three days. Freeze for up to three months. I recommend separating the patties with parchment paper before placing them in a freezer-safe glass storage container, so they don’t stick together and are easier to defrost.
- One serving is equal to approximately two sausage patties.
- To up the ante on the flavor of these homemade sausages, add allspice, black pepper, cinnamon, or thyme to the meat before cooking.
