Corsi Associates will use the following project path in evaluating and programming the space:
a) Meet with the owner, operator and other interested parties (design team) to develop an understanding of the menu, service style, price range and environment or theme proposed
b) Survey and size any existing space that is suitable for renovation
c) Using a combination of on-site interviews; project questionnaire responses and established Design Criteria for the type of space (Attachment B), develop service requirement outline
d) Evaluate existing equipment for code compliance; food safety and potential equipment re-use
e) Perform flow analysis for Banquet, Restaurant, Food Court, Bar or Serving Line area as needed
f) Determine sizing parameters based on the proposed number of seats
g) Using sizing parameters and menu plan, determine storage and equipment requirements
h) Using sizing parameters develop appropriate food safety and sanitation flow:
a. Receiving to Prep
b. Prep to Serving
c. Clearing to Soiled
d. Soiled to Trash/Recycle/Offsite Vendor
i) Develop concept and preliminary equipment budget based on the above
j) Review concept & budget with Design Team
k) Develop schematic drawings and layouts based on Design Team comments
l) Review schematics and layout with Design Team
m) Develop Construction Drawings and (if contracted) Utility Rough In plans based on Design Team comments
n) Develop equipment specifications suitable for bidding
o) Assist Design Team with Permit and/or other governing body submissions
p) Assist Design Team in responding to change orders, field and construction issues for food service
q) Perform food service equipment punch list walk through at substantial completion
