Celebrate with a stack of these delicious banana pancakes—dairy-free, gluten-free, and naturally sweetened with no added sugar! 🥞✨
Instructions:
1. Add all ingredients to a blender and blend on high until the mixture is completely smooth, about 30 seconds to 1 minute. Let the batter rest in the blender while you heat your pan.
2. Lightly coat a griddle or non-stick skillet with vegan butter or olive oil, and place it over medium heat.
3. Once the pan is hot, pour 1/3 cup of batter onto the griddle for each pancake. 4. Cook for 2–4 minutes, or until the pancakes puff up slightly and bubbles form along the edges.
4. Flip the pancakes and cook for another 2–3 minutes, or until the underside is golden brown. If the pancakes brown too quickly, reduce the heat. Start on medium heat and adjust to medium-low as needed to prevent burning. If the griddle starts smoking, lower the heat immediately.
5. Wipe the skillet clean, re-apply oil as needed, and repeat with the remaining batter.
Yield: Makes 9 pancakes (3 pancakes per serving, serves 3).
