Trying something new! With our remaining oranges and lemons I’m experimenting with some natural medicinal options.
This will be rustic Medicinal Marmalade!
It will help boost immunity and ease cold symptoms. The added benefit of fermentation will also make this God-given medicine an excellent probiotic source! 😃
2 jars with orange, lemons, & ginger
1 jar with orange, elderberries, blueberries, & ginger.
All saturated with local honey.

Why is this huge sink full of orange peels a beautiful sight?
Because it (plus 2 more piles) means 25 quarts of orange juice is ready to freeze for the year.
As rewarding as this is, the time spent with grandkids ‘helping’ with the process far exceeded… 🧑‍🌾

What’s for dessert tonight? From tree to table! So delicious and nutritious! Picked 12 grapefruit (ours were small this year) and 12 pineapple oranges (SO juicy) and 6 Sunkist oranges. Made 5 quarts of ambrosia! And look at the orange peel I get to dry for my elderberry syrup! 😃

Challenge of the day! Salmon salad 🤔

Trying to incorporate more brain food into my diet. I’ve never liked salmon but it’s the best source of Omega-3 (crucial for brain health).

So I harvested some fresh kale, broccoli, and lettuce from our winter garden and my husband lovingly smoked some salmon for me so put them together and voilà! Salmon Salad!

I must say this was definitely my favorite salmon dish so far. 😮‍💨 ⭐️

Trying something new! No hubby at home so I had to improvise…
Used some of my home grown canned chicken, added some sweet potatoes, onions, peppers, and garlic. Seasoned with cumin, chili powder, salt & pepper. Topped with sour cream and crushed tortillas for a crunch. Pretty good 😋
