Last week, Foxdale launched its first-ever solar project with the installation of a 4.37 kW DC solar system on the roof of our Maintenance Garage.

The system is estimated to produce 4,143 kWh of clean, green energy each year, offsetting 113% of the annual energy use for both the Maintenance Garage and the Bird Garden. The Maintenance Garage also powers the battery chargers for many of Foxdale’s electric tools, making this project an exciting step toward a more sustainable future.

Darlington House residents had a wonderful time yesterday learning how to decorate gingerbread houses with accomplished pastry professional, Lee Ann Adams. Lee Ann attended culinary school in Rhode Island, spent 17 years as a pastry chef at Penn State, and later taught at The Culinary Institute of America, where she earned her Master Baker certificate. She even competed for a spot on the U.S. Bread Baking Team, making it to the backup position twice!

During the session, residents learned professional piping techniques, how to use frosting as “glue,” and got creative using a variety of treats to bring their gingerbread houses to life!

Foxdale Village Assistant Director of Dining Services, Erin, hosted a Teaching Kitchen this week, giving residents a hands-on introduction to the fundamentals of cake decorating. Residents learned piping techniques, practiced simple designs, and even got to try decorating their own creations!
