Oxalate is an organic acid that derives from three sources: the diet, fungus, and human metabolism. If oxalic acid is very high in the blood being filtered by the kidneys, it may combine with calcium to form crystals that block urine flow and cause severe pain. In addition, crystals may form in the bones, joints, blood vessels, lungs, thyroid, and even the brain. This can impede the proper functions of these organs.
Foods high in oxalates are often thought to be healthy, including spinach, beets, chocolate, peanuts, tea, almonds, and berries.
