Easy Vegetable Soup for Memory Care 🥣

This simple vegetable soup is warm, nourishing, and easy to enjoy, making it a comforting option for memory care. Soft textures and familiar flavors help support hydration and overall wellness.

Ingredients
🥕 diced carrots
🥔 diced potatoes
🧅 chopped onion
🥬 chopped spinach or zucchini
🍅 canned diced tomatoes
🫗 low sodium vegetable broth
🌿 olive oil
🧂 pinch of salt and pepper

Instructions
1️⃣ Heat olive oil in a large pot and gently sauté the onion until soft
2️⃣ Add carrots and potatoes, stirring for a few minutes
3️⃣ Pour in diced tomatoes and vegetable broth
4️⃣ Simmer until all vegetables are tender

We are excited to announce our Shining Star for the month of January! 🌟💜

Kim has been a housekeeper at Cardinal Court for eight years and has recently become our Lead Housekeeper! Kim brings joy and heart into everything she does. She loves working with our residents including dancing, joking, and being there if someone needs a hug or friendly conversation. Along keeping our community shining through housekeeping, Kim is always willing to help her teammates. Outside of work, she enjoys trips to the casino or relaxing at home watching Hallmark movies.

Fun Fact: Kim leaves her Christmas lights up year-round in her living room– that’s her happy place!
