I grew up going with my grandparents, parents, then best friends in college to the Original Pancake House in Amherst, New York. Once I discovered it, I never ordered anything else except the Dutch Baby Pancake. A Dutch Baby is a pancake that cooks up along the side in a special pan. Once cooked, it is served by melting butter inside of it. Next you squeeze some lemon juice in it, sprinkle powdered sugar in it, and then cover it with strawberries. When I first was diagnosed with Celiac Disease in December of 2014, it took a long time for me to come to terms with the fact that I could no longer eat whatever I wanted. It was a mourning period. My wonderful husband knew how much I loved Dutch Baby pancakes and perfected making them so I could continue to enjoy them. When hanging with my college crew besties, he would even get up early so and make them for all of us. They always said they couldn’t tell the difference. Eleven and a half years in and I have learned that I can make almost anything gluten free with a few tweaks and a lot more effort. We use Mama Knows Gluten Free’s Dutch Baby recipe. This past weekend for Mother’s Day, my husband made me a Dutch Baby pancake and the kids made dinner with a choice of steak or lobster. Huge thanks to Harris Teeter for the yummy steaks and lobster for our dinner meal.
