The Intentional Pause Retreat Recipe Highlight: Vegetable Thai Curry over Quinoa

At our retreat, every meal is designed to nourish your body and give your digestion a well-deserved rest. This colorful Thai curry does exactly that!

Here’s how we make it:
• Sauté soft vegetables like zucchini, eggplant, and bell peppers in a little coconut oil.
• Add coconut milk, a touch of red curry paste, and a squeeze of fresh lime.
• Simmer until tender, then pour it over warm, fluffy quinoa.
• Finish with a sprinkle of chopped cilantro and a an extra squeeze of lime.
Why we love these ingredients:
• Coconut milk soothes the digestive tract and provides gentle, healthy fats.
• Cooked vegetables are easier to digest than raw and still packed with nutrients.

1️⃣ Chair Pose to Standing Leg Raise to Warrior 3 - strengthens hips, quads and lower back �2️⃣ Puppy Pose with Arm Variation - stretches chest, shoulders, and upper back
3️⃣ Deer Pose Leaning Forward - strengthens outer hip�4️⃣ Camel Lean Backs - strengthens quads and front of core�5️⃣ Locust with Cactus Arms - strengthens upper and lower back and posterior shoulders

In Sphinx Pose, the heart rises not by force but through grounding — rooting the pelvis, lengthening the spine, and expanding through the chest. It’s a reminder that true openness begins with support: stability first, then space.

In this 2-hour session, yoga teacher Joe Lee will guide you through:
>Techniques for safe spinal extension and rotation without lower back strain
>How to use leg and core strength to support heart-opening poses
>Breath awareness to release tension and increase mobility through the thoracic spine
