This Breakfast Burrito Bowl is basically your morning BFF:

✨ Peppers + onions = flavor + vitamins galore
👩🍳 Pro tip: Roast your sweet potatoes + chop your veggies on Sunday. Then? Just toss, sizzle, scramble, and top all week long. Breakfast in MINUTES. 💃

🥑 Breakfast Burrito Bowl 🌶️🍳
A colorful, protein-packed bowl that fuels your morning and keeps you satisfied!
Ingredients
2 eggs
½ sweet potato, cubed
½ – 1 cup cooked chicken breast, chopped
¼ onion, thinly sliced
1 bell pepper, sliced
2 Tbsp salsa
¼ – ½ avocado, sliced
Olive oil spray + 1 Tbsp EVOO
Salt & pepper to taste
Instructions
1️⃣ Roast sweet potato cubes at 425°F with olive oil spray, salt, and pepper until tender.
(Tip: do this ahead on Sunday!)
2️⃣ Sauté bell pepper + onion in 1 Tbsp EVOO until soft.
3️⃣ Add chicken to the skillet to warm through.
4️⃣ Stir in sweet potatoes if prepped ahead.
5️⃣ Scramble eggs, then combine everything.
6️⃣ Top with salsa + avocado. Add extra seasoning if you like! ENJOY!
