(Using Instant Pot Ultra 8-quart)
Servings: 6-8 large bowls

To cook the broth
โข 2-3 lbs of beef bones, knee or femur, wash then grill in Nuwave oven or broiler 20 min per side, the more you grill, the richer and darker the broth will be and no scum to remove later
โข 1-2 lbs of ox tail, cleaned
โข 2 medium or 1 large sweet onion cut in half and grill for 20 min also
โข 1 large k**b of ginger, grilled

โข 3/4 TPsp salt
โข 6-7 TBsp fish sauce using 3 crabs brand

โข 1 small daikon radish, peeled and cut into big chunks
โข 1-2 packages of beef meatballs
Put everything in Instant Pot Ultra 8qt, except the beef meatballs. Fill the pot up to the max line with water (Please respect the max line or have a mess later). Use Pressure Cook setting on high for 45 minutes and use Natural Release if you have time, if not Quick Release can be used.
Remove the ox tails and add beef balls and bring to boil using Saute mode. At this time it is ready to be served but if you have time and can wait, close the lid and Pressure Cook it on high for another 45 minutes for dark, rich, flavorful, savory broth. When done, remove some fat oil on the top oil layer with a ladle or oil separator/net (youโll want to leave some). Remove bones, onion, ginger and spices. Add more water to pass the max line. Add meatballs and bring it to boil by using Saute mode. Now you have a perfect pot of Pho broth!

โข 1 to 2 bag of fresh Pho noodles (1 bag usually makes 5 bowls), prime in boiling water 3- 5 seconds
โข 1-2 lbs of beef eye round, flank steak, or fillet mignon, thinly sliced (You can ask the butcher to do it for you).
โข Green onion and cilantro, chopped
โข Sweet onion, thinly sliced
โข Bean sprout, basil and sawtooth cilantro
โข Lime wedges
โข Jalapeรฑo Pepper, thinly sliced
โข Hoisin and Sriracha sauce
To assemble the bowl, add cooked Pho noodles then top with sliced beef. Pour boiling broth and meatballs, add sliced white onion and sprinkle chopped green onion and cilantro. Serve with basil, sawtooth cilantro, bean sprout, lime wedges and sliced jalapeรฑo pepper.
Note: You can completely skim fat oil off the the broth by cooling it until the fat particles solidify in the refrigerator.
