peanut butter protein cereal bark 🥜✨

chewy date caramel + peanut butter + crunchy cereal = the snack i can’t stop breaking pieces off of straight from the freezer. 🤩

ingredients:
-1 cup pitted medjool dates
-1/2 cup water
-1/2 cup Peanut Butter & Co. pure peanut powder (dc: healthyhelper)
-2 cups Magic Spoon Cereal peanut butter cereal
-3 cups Nature's Path Organic brown rice puffs

note: if you want to skip the date puree step, you can swap in Date Lady date syrup (dc: healthyhelper)!

instructions:
-line a baking sheet with parchment paper.
-in a blender or food processor, blend the medjool dates and water until completely smooth and thick.
-transfer the date paste to a bowl and stir in the peanut butter powder until fully combined and creamy.
-add the magic spoon peanut butter cereal and brown rice puffs. mix well until everything is evenly coated. you may need to use clean hands to fully combine.
-press the mixture firmly onto the lined baking sheet into an even layer. press it down tightly so it holds together.
-freeze overnight until completely firm.
-break into bark pieces and store in the freezer or refrigerator.

want to level it up? try mixing in:

• mini chocolate chips
• crushed peanuts or cashews
• chia or h**p seeds
• coconut flakes
• cinnamon or flaky sea salt
• a scoop of peanut butter protein powder

and if you’re feeling extra… drizzle the top with melted dark chocolate before freezing for that peanut butter cup vibe. 😏

since we’re throwing it back to 2016 lately, I was reminded of how much I have always LOVED Halo Top Creamery 😉

strawberry season in florida = no excuse not to put strawberries on everything!! 🤩

for an easy, healthy strawberry shortcake–inspired snack:

•fold up a few egg wrap or pancheesi (dc: healthyhelper15)
•top with zero sugar greek yogurt
•add finely chopped fresh strawberries
•sprinkle with sugar-free powdered sugar
•and finish with a drizzle of this homemade strawberry syrup (recipe below!)

it’s light, sweet, creamy, and hits that classic shortcake vibe in a single serve snack! 🙌🏻

for the homemade strawberry syrup:

•1/2 cup strawberry jam (dc: healthyhelper)
•1/4 cup water
•2–4 tbsp vanilla syrup (dc: healthyhelper)
•1 tsp fresh lemon juice (optional, but brightens the flavor)

how to make:

•add the strawberry jam and water to a small saucepan over medium heat.
•whisk or stir until the jam melts down and the mixture becomes smooth and pourable.
•reduce heat to low and stir in the vanilla syrup. start with 2 tablespoons and add more if you want it sweeter.
•simmer gently for 2–3 minutes, stirring occasionally, until slightly thickened.
•remove from heat and stir in lemon juice if using.
