I had so much dock sprout up in my raised beds- let's make something! Or two things? Dock is iron rich and great for detoxification. In addion to the yellow dock iron tonic recipe, I am also going to make some infused apple cider vinegar which provides many of the same benefits.

Fall is here and it's time to dig your roots! One of my favorite roots to work with this time of year is Yellow Dock (Rumex spp). We have two very common species of Dock here in New England, Rumex crispus and Rumex obtusifolius.
