Here are some meal ideas (based on some additional items that you have on hand at home).
🍗 🥔 Day 1: Lemon Herb Chicken with Roasted Potatoes
Season the boneless skinless chicken breast with salt, pepper, garlic powder, and dried herbs like rosemary and thyme. Drizzle with olive oil and a squeeze of lemon juice. While the chicken bakes, cut some Russet potatoes into cubes, toss with olive oil, salt, and pepper, and roast them on a separate baking sheet. Serve the chicken and potatoes with a fresh salad on the side.
🥔 Day 2: Smoked Sausage and Potato Skillet
Slice the Eckrich Smoked Sausage into rounds and pan-fry until browned. Dice some Russet potatoes into small cubes and cook in the same skillet until tender. You can add chopped onions or bell peppers if you have them. Season with paprika or a little garlic powder. This is a hearty, one-pan meal.
🍤 🍚 Day 3: Shrimp Scampi with Rice
Thaw and pat dry your EZ Peel Colossal Shrimp. In a pan, sauté garlic in butter or olive oil. Add the shrimp and cook until pink and opaque. Add a splash of white wine or chicken broth and a squeeze of lemon juice. Stir in fresh or dried parsley. Serve this over a bed of fluffy rice to soak up all the delicious sauce.
🍗 🥔 Day 4: Chicken and Potato Soup
Cut the boneless skinless chicken breast into small cubes and brown them in a pot. Add diced Russet potatoes, chopped onions, and carrots (if you have them) to the pot. Cover with chicken broth and simmer until the vegetables and chicken are cooked through. You can add a little cream or milk at the end for a richer soup. Serve with bread on the side for dipping.
🍤 🍚 Day 5: Sausage and Shrimp Gumbo-Inspired Dish
This meal uses a little of both the Eckrich Smoked Sausage and the EZ Peel Colossal Shrimp. Slice the sausage and sauté it in a pan. Add the shrimp near the end of the cooking process. Use your rice as the base, and feel free to add any vegetables you have, like celery or bell peppers, for a more authentic flavor.
🍗 🥔 Day 6: Baked Potatoes with Chicken or Sausage Toppings
Bake several large Russet potatoes until the skin is crispy and the inside is soft. While they bake, cook either diced boneless skinless chicken breast or sliced Eckrich Smoked Sausage. When the potatoes are ready, split them open and top them with your choice of meat. You can add cheese, sour cream, or chives if you have them on hand. Serve with a simple salad.
🍤 🥔 Day 7: Shrimp and Roasted Potato Sheet Pan
This is another easy, one-pan meal. Cut the Russet potatoes into small wedges or cubes and toss with olive oil, salt, pepper, and paprika. Roast them on a baking sheet for about 15-20 minutes. Then, add the EZ Peel Colossal Shrimp to the same pan, tossing with a little more olive oil and spices. Return the pan to the oven and cook for another 5-8 minutes until the shrimp are pink.
