A fabulous fast lunch!

Chicken bone broth quinoa
Shredded chicken cooked in bone broth
3/4 cup of Diced summer squash and red bell peppers
1/4 cup or more of vinegar dill soaked onion cucumber mix
Top off with your choice nuts or seeds

Heat up or eat cold- your preference

So good!

This meal is SOOO simple! Pesto pasta with broccoli and roasted garlic cherry tomatoes. Take 15 minutes to prep and make then plate and serve. I top it with fresh shredded Parmesan and pepita seeds.

Breakfast for a bean lover! Since starting on my pathway to living healthy through Perimenopause my meals look minimally different than prior. Here is a great idea for anyone but specially for those of us women in the midst of hormone imbalances.

Focus:
Calcium needs- black beans, tahini in the hummus, and a very small amount of sharp cheddar cheese.
Fiber- every piece of this meal is filled with fiber.
Healthy fats for healthy hearts- olive oil in the bean salsa mix as well as in the hummus. Leaner cheese choice and beans.

Filling but not overly filling. Eating only the portion my body needed. 🙂

Fast easy well balanced meal idea.

1 packet
A handful of ramps we pulled from the back yard
1 bunch fresh asparagus cut into preferred pieces
3/4 cup preferred protein. In this picture I have 1/2 chicken breast
2 Tbsp chicken broth
1 Tsp minced garlic
Salt and pepper to taste

Sauté all in a pan with the broth. Serves 2.

Easy healthy vegetarian meal!

1. 1 package Barilla protein plus penne
2. 2.5 cups chopped kale
4. 10 small cherry tomatoes halved
5. 1 package of serfs of change 7 grains
6. 2 Tbsp of your choice of pesto
7. Salt and pepper for taste

Boil noodles. Drain. Mix all ingredients and sauté for a few minutes. Enjoy!

I added a side of fruit and some naan bread.

What better way to feed our souls on this depressing cold snowy day in the Midwest. Why, making a big batch of beef stew of course! We are truly blessed to have had the opportunity to buy a 1/4 of a cow from my sister’s in-laws. Otherwise we wouldn’t have had this bone from soups in the freezer still. 🥰

Bottom of the veggie bucket/grain night. Grocery day can’t come soon enough. But…….. this little beauty was heaven!!!

Ingredients:
1. 1 can organic black beans
2. 1/2 chicken breast
3. 3 half cut up carrots
4. 2 🥬 bok choy stems and a leaf
5. 9 Brussels
6. 1 garlic clove
7. 1/4 yellow onion
8. Onion powder some salt and pepper for taste and a splash of veggie broth.

Directions:
My chicken was already prepared so I put it in with the beans and all my chopped left over veggies from the last week. I sautéed it all in a small amount of olive oil and the broth. Then made a batch of the only grain I had left in bulk, the white rice.

It was darn tootin delish and I used every single left over veggie in my fridge. ❤️

Empowered Wellness

Empowered wellness started as a small idea and a need to break the mold corporate america had fashioned me into. I finally broke through and took the leap of faith. I alone could empower myself to make my dreams become a reality and that my knowledge of nutrition, my passion for helping people, and my ultimate love for healing would lead me to success. I am now free from the corporate entities that bound my ability to do what I love most; help people learn, set goals, change, and recognize the importance of nutrition and wellness in their lives. I was empowered to make this drastic change and recognized that through this empowerment lay the key to my success. Thus our name and founding principal, “Empower, and those you empower will succeed.”
