Savta Reena’s Famous Fricasee
Weight loss Coach | Health Promoting Lifestyle Changes]

Ingredients:
2 large onions
1 package (1 1/2-2lbs) chicken gizzards or pupiks
2 packages (3 lb) chicken or turkey necks
2 packages (3 lb) chicken wings
1 family pack (5lb) chicken bottoms
1 family pack (3 lb) chopped lean meat
5 lb bag Yukon gold potatoes, peeled and chopped into large chunks or they will fall apart during the cooking process.
6 large carrots, chopped into large chunks
1 -2 cans tomato sauce
1 -2 containers tomato juice
1 cup date sugar (or regular sugar if that’s what you have for Pesach, during the year I recommend using coconut sugar)
1 teaspoon lemon juice

Directions:
Use your largest pot that has a very heavy bottom (minimum 16 quarts). I prefer a wide pot as opposed to a tall
narrow pot.
Place the chopped onions on the bottom of the pot and sauté for 5 minutes.
Add the chicken gizzards with the can of tomato sauce. Fill the empty tomato sauce can with water and pour the water into the pot.
Simmer on low for 1 hour.
While the gizzards are simmering make the meatballs and prepare your potatoes and carrots.

Meatball recipe:
3 lb chopped lean meat
1/4 cup ketchup
2 eggs
1/2 cup potato starch or matzoh meal
Mix well, roll into balls and bake for 25 minutes at 350

Layer the remaining ingredients into the pot in the following order:
Potatoes
Carrots
Chicken thighs
Chicken or Turkey necks
Chicken wings
Meatballs
Add sugar, lemon juice and tomato juice
Everything should be submerged into the liquid. If not, add more tomato juice or tomato sauce. (The amount is sauce you need will depend largely on the shape of your pot.)
Simmer on low for 3 hours.
After the fricasee cools
I transfer everything into 4 9x13 pans evenly distributing the potatoes, meatballs and other types of chicken.

✨Fruit Compote✨


8 large apples, peeled and sliced (I used yellow delicious, Fuji or Honeycrisp would be great too!)
1 16 oz bag frozen strawberries
1 16 ounce bag frozen cherries
1 cup prunes
4 cups of water

Add all ingredients to a pot. Simmer on low for an hour and a half. Let cool completely before transferring to your storage containers.

Note: This recipe is very forgiving. If you don’t have frozen cherries you can replace with frozen peaches or whatever fruit you have on hand.

I hope your family loves this recipe as much as mine does. It’s the only dessert I want after a large Yom Tov meal. Cold, naturally sweet and refreshing - perfection!

Perfect Pesach Pizza
IIN Certified Health Coach•Weight loss•Lifestyle Changes]

Ingredients:
2 large eggs
1-2 Tbsp marinara sauce of your choice
1-2 Tbsp shredded cheese
Sliced & sautéed purple onion, olives, mushrooms, peppers (optional)
Salt & pepper to taste

Directions:
Whisk eggs and season with salt and pepper.
Place eggs in a small (6 inch) non stick frying pan and allow to cook for a few minutes until the eggs start to set.
Flip over and immediately add marinara sauce. Spread with spoon and top with shredded cheese.
If you are adding any sautéed vegetables add them now.
Cover the pan to let the cheese melt for 2-3 minutes.
Serve with a large green salad and homemade potato fries.

I’ve been making these pizza eggs for my kids for over 20 years. They are always a hit!

This easy, quick meal is exactly what you are looking for. Perfect for Erev Pesach if you don’t want to serve meat or a fantastic Chol Hamoed brunch before you head out for a day of fun.

Basic Balanced Salad with Green Goddess Dressing

Erev Pesach means longer hectic days with endless to do lists. It’s easy to be so busy that there’s little time to prepare a filling meal for yourself.

That’s where this salad comes in - it has protein, starch, healthy fat and tons of fiber which will give you the energy you need to keep crossing things off your to do list. I love the crunch from the vegetables & nuts and the green goddess dressing takes it to the next level.

Basic Balanced Salad with Green Goddess Dressing


Ingredients:
2 heads of Romaine lettuce, chopped
1 bag shredded cabbage
1 bag shredded carrots
5-6 Persian cucumbers, diced
6 scallions, white & green part, chopped
2 cans of chickpeas, drained & rinsed
4 medium sweet potatoes, chopped into small cubes
1/4 cup dry toasted slivered almonds (optional)

Directions:
Preheat oven to 375.
Place cubed sweet potatoes on lined baking sheet and place in oven for approximately 25 minutes.
Prepare the rest of the salad ingredients and place in one large bowl or a few small containers if prepping for a few meals in advance.

Green goddess dressing
1 large ripe avocado
1-2 large garlic cloves
1/3 cup water
1/2 cup packed basil leaves
1/2 cup chopped scallions
Juice of one lemon
2 Tbsp Apple cider vinegar
1 teaspoon salt (optional)
Blend
Add water to thin to achieve desired consistency

Notes:
If you are making this salad to prep a few meals in advance I recommend keeping the dressing in small separate containers. If serving immediately, feel free to pour the dressing over the whole salad and mix.

This salad dressing is also perfect for Pesach. Tasty and easy! I’d double or triple the recipe and keep it in the refrigerator to use for a few meals.

Overnight Berry Oat Chia Cups

I love this recipe because it’s quick and easy overnight oats but with the added bonus of the health benefits of chia seeds. This delicious recipe takes 5 minutes to put together and you will be rewarded with a tasty, filling breakfast or snack that is full of fiber, protein and healthy fat. Chia seeds have a both soluble and insoluble fiber, which act as pre and probiotics. They are great for gut health and add a yummy creaminess to this recipe.


Makes 1 serving

Ingredients:
1/2 cup rolled oats
3/4 cup unsweetened almond milk
2 teaspoons chia seeds
1/2 teaspoon vanilla extract
1 -2 teaspoons maple syrup (add as much or as little as you like according to your taste)
Dash of cinnamon
Top with 1/2 cup fresh mixed berries or whatever fruit you have on hand. Or feel free to mix the fruit into the overnight oats.

Directions:
Combine all ingredients, place in a jar or container and cover. Place in the refrigerator overnight. In the morning you’ll have a thick and creamy delicious breakfast or snack!

Looking for a healthy mishloach manot idea? I love preparing something that can be enjoyed at the seudah or as a quick nutrient dense snack or meal on Purim day. It’s a day full of fun foods it’s important to remember to nourish yourself properly in addition to enjoying all the hamentaschen and candy.

Check out these fun and tasty ideas that I gave out the last few years:
1. Honey mustard salad dressing with pumpkin seeds.
2. Rainbow salads with balsamic dressing.
3. Quinoa salad with chopped rainbow vegetables with nut, raisin medley.
4. Rainbow mason jar salad.
5. Kale Salads with all the toppings.
6. Vegetable boards with homemade hummus and matbucha.

This recipe is super quick, super healthy and super delicious! I make a fruit crisp for dessert every Shabbos and enjoy experimenting with different fruit combinations and toppings. Sometimes though, simple is best.

3 Ingredient Apple Crisp
IIN Certified Nutrition Health Coach•Weight loss without dieting]

Ingredients
3 large golden delicious apples, peeled and chopped
1 tsp cinnamon
2-3 Tbsp almond flour

Directions
Preheat oven to 350. Place chopped apples into an oven to table cookware. Sprinkle cinnamon and top with almond flour. Bake 1-1 1/2 hours covered. Reheat uncovered before serving.
