How to use it
For typical cookie dough, use about 1 to 2 teaspoons of Lekithos® Deoiled Sunflower Lecithin Powder per cup of flour. It is not a 1:1 substitute for flour, sugar, butter, or eggs, so your base Christmas cookie recipe (sugar cookies, gingerbread, etc.) should stay basically the same.​
When to add it
The easiest way is to mix the lecithin powder into your dry ingredients first (flour, sugar, cocoa, etc.) so it disperses evenly and does not clump. Once it is blended with the dry mix, proceed with your recipe as normal by adding the wet ingredients and forming the dough.​
What it will change
In cookies, deoiled sunflower lecithin can help them spread a little less, feel slightly softer, and stay moist a bit longer due to improved fat–water emulsification and moisture retention. The flavor is essentially neutral at these small amounts, so your Christmas cookie spices, vanilla, and butter flavor should still dominate.​
