🍽️ When a dish has a story — it tastes different.
That’s why I always share more than just cooking techniques. In my Ukrainian classes, every recipe connects to centuries of tradition 🇺🇦

I just joined “More Than Borscht” — a course by Cultosvita that dives into the roots of Ukrainian cuisine. And I’m hooked! 📚 Our amazing lecturer .polishchukPolishchuk, is a writer, restaurant consultant, and culinary history enthusiast.

Here are just a few mind-blowing facts I’ve already learned:
🔸 Ukrainians didn’t actually eat that much pork till 19 century— beef, lamb & poultry ruled in different regions
🔸 Before potatoes, mashed parsnips were the thing!
🔸 Orange carrots only arrived in the 18th century — before that they were white, yellow & purple
🔸 Thanks to Queen Bona Sforza, 16th c. Western Ukraine had… broccoli, artichokes & even oysters! 👑🥦🦪

Я щойно приєдналася до курсу «Більше ніж борщ» від — і вже у захваті! 📚
Наш неймовірний лектор — Всеволод Поліщук, письменник, ресторанний консультант і фанат кулінарної історії.

Ось лише кілька фактів, які мене вразили:
🔸 Українці насправді не так вже й багато їли свинини до XIX cт— в різних регіонах переважала яловичина, баранина та курятина
🔸 До появи картоплі пюре робили з пастернаку!
🔸 Помаранчева морква з’явилася лише у XVIII столітті — до того були білі, жовті та фіолетові
🔸 Завдяки королеві Боні Сфорці у XVI столітті на Західній Україні вже були… броколі, артишоки й навіть устриці! 👑🥦🦪

I believe that every dish has a story — and that story adds flavor.

That’s why, in my cooking classes, I always share not only the techniques but also the cultural context. Whether it's the history of borscht or the journey of varenyky, these stories help us feel a deeper connection to tradition.
I’m thrilled to have joined a on-line course by : “More Than Borscht: What You Should Know About Ukrainian Cuisine.”
It’s a course about how food shapes our identity — from ancient ingredients to forgotten traditions. The lecturer is Vsevolod Polishchuk, a writer, restaurant consultant, and dedicated researcher of Ukrainian gastronomy.

I’ll be sharing some of the most fascinating insights soon!

I’m kicking off my series with a chef who perfectly embodies curiosity, creativity, and the joy of breaking the rules: Heston Blumenthal.

Known for his three-Michelin-starred Fat Duck and deep dives into flavor, Heston approaches cooking like a scientist and an artist. I chose him to open this series because of his non-traditional, mind-opening approach to food. He reminds us that what we cook is connected to how we feel, what we remember, and even how our microbiome responds.

📘 The Book: Is This a Cookbook?
This beautifully illustrated collection of 70 recipes blends science, imagination, and joy. It explores the deeper connections between food, memory, emotion—and yes, even the gut-brain axis. Each page is a spark for creativity in the kitchen.

I’ll be sharing a favorite from the book—Spaghetti Carbonara—in a live cooking demo this week. Stay tuned!

A little taste of our Italian Cooking Class at Zwei Brewing! 🇮🇹🍺
We made delicious prosciutto-melon skewers, rich Eggs in Purgatory, and topped it all off with beautiful Beeramisu — decorated with mint, strawberries, and edible flowers 🍓🌸.
Every dish was perfectly paired with Zwei’s craft beers 🍺.
I also shared my favorite chef tips, knife skills, and cooking techniques along the way 👩‍🍳🔪.
So much fun, flavor, and heart in one unforgettable day — grazie to everyone who joined! 💛
