Here’s the salad from my last video, made with my favorite vegetable, Romanesco broccoli!!! ❤️ I added a few more ingredients than what I mentioned in the video…freshly ground cumin seeds and balsamic reduction…which really balanced out this dish and made the flavors pop! 💥 Cheers to nourishing ourselves with whole real foods and supporting our local sustainable farms as often as possible. 🌱 xx - Jill

- Roasted Romanesco & Radicchio Salad Wraps -

• romanseco broccoli & white onion, tossed in extra virgin olive oil, cumin, sumac, sea salt & black pepper, roasted at 375 degrees Fahrenheit for 30 minutes
• whole radicchio leaves
• pink grapefruit segments
• chopped Brazil nuts & chopped mint
• black olive tapenade
• balsamic reduction

This might be my new favorite salad! ☀️ It’s so easy to make too!

• roasted delicata squash tossed in extra virgin olive oil, sumac, za’atar, garlic, onion powder, sea salt, & black pepper / roast at 350 degrees Fahrenheit for 30 minutes
• wilted spinach & arugula
• sautéed red onion
• blood oranges
• roasted pumpkin seeds
• balsamic reduction

A month ago, a wonderful friend of mine gifted me a case of venison from a buck he took down on a hunt in Ohio. Today, I made chili with some of that venison, local beans from Omena Organics, collard greens and tomatoes from Meadowlark Farm that I froze this fall, and garlic from my incredible Brickyard Farms family. ❤️ When I cook I try to take a moment to privately acknowledge the care and hard work that went into making the ingredients in the dish possible. Today, I’m publicly acknowledging those efforts, in this case my friend having the upmost respect for our natural world and the buck he took, and my local farmers who grew the vegetables and fruits I cooked with, in hopes I can encourage others to take up this appreciation practice. Connecting the dots between what we are cooking with and eating, and where those ingredients came from is a lovely way to stay grounded in the natural world around us. ✨
