It's TASTY TUESDAY and a new obsession has been unlocked!!! Thanks to I've gone mad for chopped salad. Yes...it takes a minute to chop but this salad lasts me all week and I have never had so much fun chopping! I use it with a corn chip, top it with cottage cheese, mix it with shredded chicken...and the dressing, y'all. Was I tempted to drink it right out the mason jar? Possible. TASTY TUESDAY! This one legit took 15 minutes to throw together. Cut up some cherry tomatoes. Julianne some basil. Dump in some feta. Pounded down three chicken breasts with some olive oil, salt and pepper and Italian seasoning. Grill for a few minutes. Top with your feta bruschetta. Serve with a little side salad for more veggies or throw a few veggies on the grill! Light. Filling. Nutrient dense. Delicious.

Need a quick and easy, light, summer meal? Butter lettuce, cucumber, tomato, kalamata olives, garbanzo beans, a sprinkle of feta and tzatsiki! Add in some gyro meat if desired and VOILA! Or as they say in Greece Έδω σας το!

TASTY TUESDAY! Ok...so I didn't INTEND to make it purple but with half a head of purple cabbage I guess what can one expect? Maybe a fun way to get your kids to eat cabbage? This was DELICIOUS! Ground pork, red onion, green onion, water chestnuts and lots of cabbage sauteed with a little sesame oil, some soy sauce, fresh ginger (I use the tube) and a dollop of greek yogurt with sriracha for a little extra protein pop. It's TASTY TUESDAY! And no...this is not an April Fools joke. It was actually yummy. A homemade Sloppy Joe sauce mixed in with ground turkey and red and yellow peppers, "slopped" on a tostada shell (no bun here) and topped with shredded cabbage, carrots and chopped pickles. Sloppy, sloppy Joe!!

Tis the grillin' season in Tucson (if that wind would die down). Here we have some carrots, squash and zucchini rubbed with a little olive oil, salt and pepper and grilled to al dente perfection. Add some grilled chicken or some black beans. Yum!!!

It's TASTY TUESDAY! And since it's also Mardi Gras, and bell peppers are a staple of Cajun food! Let's ponder the pepper! You KNOW I'm including it in dinner tonight! Green peppers have lots of nutrients and are high in vitamins C (134% of DV) and B6. They are also a great source of fiber and help heart, eye and gut health! What's your favorite way to eat this versatile veggie (that is actually a fruit...shhhhh)?

I simply can't lie. I love a creamy soup... potato, mushroom, broccoli...whatever. But cream soups are not the healthiest choice and I'm ALWAYS trying to figure out ways to sneak in more veggies. This soup let me cook a whole head of cauliflower, then REMOVE IT with some of the broth, use the immersion blender (one of my fav kitchen gadgets) and add it back into the soup making a creamy, delicious consistency without the high calorie and fat content and WITH the nutrients and fiber. The second picture is just the puree... Once it's added into the soup, it's just a creamy, delicious thick texture. And leftovers are a double bonus. Boom!
