Here's a simple and nutritious recipe that is easy to prepare for seniors:
🌿 Spinach and Feta Stuffed Chicken Breast 🍗
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup fresh spinach leaves
- 1/4 cup crumbled feta cheese
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Cut a pocket into each chicken breast, being careful not to cut all the way through.
3. In a bowl, mix together the spinach, feta cheese, garlic, salt, and pepper.
4. Stuff each chicken breast with the spinach and feta mixture.
5. Heat some olive oil in a skillet over medium-high heat. Brown the stuffed chicken breasts on both sides.
6. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
