Although it may not yet feel like it, the summer and, hopefully, a spot or more of glorious weather is approaching. Therefore, for Scrumptious Recipe Sunday – something green and summery for your picnic, snack, or any other refreshing meal table. Extraordinarily nutritious, likewise delicious, eye-catching green, and quick and easy to make – Basil Butter Bean Hummus (from One Green Planet website).
Ingredients:
• 300g/1.5 cups cooked butter beans (lima beans)
• 30g/ 0.25 cup raw pumpkin seeds
• a small handful of kale (chopped)
• a large handful of fresh basil
• 2 garlic cloves
• 4-5 tablespoons lemon juice
• 2 tablespoons tahini
• 3 tablespoons E.V.O. oil
• 5-7 tablespoons water
• Salt and pepper to taste
1. Place the butter beans, pumpkin seeds, basil, kale, garlic, lemon juice, tahini, and oil in a food processor. Blend until the ingredients have broken down and are somewhat smooth.
2. Add the salt and pepper, and then water next. I suggest starting with three tablespoons of water and then adding one tablespoon at a time. Process until smooth.
