Awe pork!!! Take those roundmans pork tenderloins and fry them hard on all sides, after s/p seasoning. Small bit of onion, lots garlic, anchovy, red pepper chili, cooked in the fat. Add red wine vinegar, home made chicken bone broth, green olives, prunes, capers…do not forget to deglaze first with white wine. Reduce, add a thickener if you want. Add those pork pieces back in. Cook low and slow either stove top or oven I prefer oven, until falling apart. Add parsley at the end while hot. Serve over rice, mashed boiled red potatoes is my fav or whatever….so f**ing good

Stuffed poblanos!!! Home canned pintos mashed, cook onion, garlic, spices, corn, beans-in layers of flavor. Roast the peppers- remove seeds and open up. Mix in cheese with the beans. Stuff-top with cheese, roast to get melty and crispy. Serve with fresh made salsa, avocado. Some chose rice, some tortillas. 😍

Honour-Jay caught a huge trout at Blue Lakes, plus a few more, so we ate em up! Poached in butter! Rice with fresh spinach, vinaigrette, butter-home made gomasio!!! Chili and toasted sesame oil. He had his over homemade ramen and fried eggs. The pink trout shows they’ve been eating in the wild, not farmed. Make sure you catch from a clean lake or river…🐟🎣

Evolution of perfect collard greens. Destem. Wash. Soak while you chop an onion and garlic. Rinse.if you have a ham hock boil it while you do all this in about two or three cups of water. Then use that pork chopped up and the water for cooking. Otherwise use pancetta or really good quality bacon chopped. In a cast iron pan heat the pork, add the onion, add the garlic. Salt. Layer the collards in three layers salting and cooking down in between. Add the ham water. Cover and cook. Cook and cook. Until all the membranes have broken down.

Evolution of the perfect French Fry. Organic russets cut to perfection. Cold water soak plung for at least 30 min. Dry. Heat that homemade tallow to 400 degrees. Flash fry like it’s the 70’s skating rink on a Friday night. Freeze!!!!! Now heat it up again for that crispy last fry. There’s a few other tricks but I’ll keep it to myself 🍟🍔

Pacific Northwest did not disappoint! We love it there and are looking forward to moving back soon. Boys fished, we hiked, I saw old friends, attended families, saw grandkids, took naps and we even enjoyed the rain on our camp for a few days!
