Awe pork!!! Take those roundmans pork tenderloins and fry them hard on all sides, after s/p seasoning. Small bit of onion, lots garlic, anchovy, red pepper chili, cooked in the fat. Add red wine vinegar, home made chicken bone broth, green olives, prunes, capers…do not forget to deglaze first with white wine. Reduce, add a thickener if you want. Add those pork pieces back in. Cook low and slow either stove top or oven I prefer oven, until falling apart. Add parsley at the end while hot. Serve over rice, mashed boiled red potatoes is my fav or whatever….so f**ing good
