Endorphins - that naturally occurring chemical in your brain that makes you happy.

There are many ways to get out of a rut and start feeling happy again.
1. Your favorite music
2. Chocolate
3. Spicy foods (if you can handle it, but start small if you are new to it)
4. Comfort food that is compatible with your body (think of the foods you used to enjoy as a kid)
5. Ginseng, smelling certain oils or foods (example is vanilla extract)
6. Sometimes healthy gossip helps and it has to be with good intentions to bring others self-esteem up or helping others. Stay away from bringing other people down.
7. Smiles are good if they are real
8. Love that is understanding
9. Exercise that you enjoy going to. Moving the body can help tremendously.
10. Anything that you find exciting and enjoyable (planting microgreens).

We just delivered our microgreens to Homegrown Meats in Newark, and also purchased their local eggs. Have you ever noticed that local eggs have an amazing quality to them? They have duck and chicken eggs. I like to label my foods sometimes and this one is called "THE DAVE". It is a SCRAMBLED egg SANDWICH. It is one of the easiest and leanest foods you can eat. You can put BEET microgreens for coloring and extra minerals or you can add PEA microgreens to add some sweetness to it.

If you have never had BEET microgreens before they will be available shortly. BEET microgreens are a bit more sensitive than other microgreens so their shelf life is short compared to the normal two weeks. More info to come on BEET microgreens.

Sunflower microgreens? Why? Sunflower microgreens have a complete source of amino acids and in just 3.5 oz of these little guys they contain 88% of your Iron Daily Value needed. They are also a good source of Vitamin A, C, E, K, B6 and folate and they contain omega 3's and omega 6's.

Sweet cravings can be tough. How do you STOP those cravings? By eating a low carbohydrate diet. Once your body gets used to not eating sweets, it normally finds a balance point where the cravings are reduced. Here is a recipe on where to start. But as always add those microgreens. Many of your minerals and vitamins are in those microgreens.



GARLIC & LEMON CHICKEN W/GREEN BEANS & RED POTATOES!
(Gluten free, Low Carb, Diabetic Friendly and so simple to make)

6 tablespoons extra virgin olive oil
2 lemons, 1 thinly sliced, 1 juiced
4 cloves garlic, minced
1 teaspoon salt
1/2 t freshly ground black pepper
3/4 pound trimmed green beans
8 small red potatoes, quartered
4 chicken breasts (bones left in, with skin)

Preheat oven to 400°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet. In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices. Add the potatoes to the same evoo mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans. Place the chicken in the same bowl with the evoo mixture and coat thoroughly. Place the chicken, skin-side up, in the dish or skillet. Pour any of the remaining olive-oil mixture over the chicken. Roast for 50 minutes. Remove the chicken from the dish or skillet. Place the beans and potatoes back in oven for 10 minutes more or until the potatoes are tender. Place a chicken breast on each of 4 serving plates; divide the green beans and potatoes equally. Serve warm.

I have not tried this yet. However, a sugar free MILKY COCONUT Tres Leches sounds delicious. You can replace some of the ingredients if your body is not compatible with them. CUTTING the cake is a different story. I'm thinking of adding chocolate covered sunflower microgreens to it to add something different to it. Chocolate covered sunflower microgreens? Yeap, delicious.

There is so much to appreciate. When someone cooks you a meal, think of all the effort that went into it. Making home made food takes quite a bit of effort and if your cook knows microgreens they will add them to the meal. Send your friend a THANK YOU letter next time they invite you to one of their amazing cooking events. And if you don't know how to cook then take some microgreens to their cookout. Introduce them to microgreens and share how beneficial they are in minerals and vitamins.

Just want to THANK YOU for helping spread the word about health and how different types of microgreens can have a HUGE IMPACT on your body. Health comes in different forms and one of them is food. Being active and learning what your body is able to handle is important. Not only that but the environment you allow to place your self in. Everything has an impact on you and it is about balancing what is best for you. Learning that your body may be different from others is part of the process. RESPECT your body. Ceviche can be complex or as simple as you want it to be. With the right combination of veggies and spices you get just the right taste. The secret ingredients though are lime and cilantro. There are so many variations of this dish that it all depends on the country. It is well known in Mexico, Central America, and certain parts of South America. One of the healthiest dishes ever known.

Depending on the country, you can even get raw fish and soak it in fresh lime juice and let it sit for 8 hours. It requires no cooking. However, if you prefer to cook the fish, you can grill it or even boil it.
